Domaine Pinson now boasts a vineyard of 14 hectares (2 hectares of new plantings having been added in 2012). The estate holds a fine heritage of 7 hectares in Chablis Premier Cru across the climats of Fourchaume, La Forêt, Montmain, Mont de Milieu, Vaillons and Vaugiraut, plus 2.5 hectares in Chablis Grand Cru, on the renowned climat Les Clos, considered the most prestigious of the Grand Crus and the most suited to ageing. At Pinson, there is a deep love for the vine and the Chablis soils. Every effort is made to obtain the ripest and healthiest grapes possible, from de-budding to aerate the vine and combat often harmful humidity, to reasoned pest management and green harvesting. After manual harvesting, the grapes are sorted twice and then conveyed to the presses by conveyor belt to avoid any damage. Since 2003, Domaine Pinson has been equipped with a winery featuring a computer-controlled thermo-regulation system, enabling precise and optimal vinifications. As a result, Domaine Pinson produces quality Chablis every year, combining minerality and tension on a fruity, citrusy foundation. From the Chablis Village level, the first nose expresses an enthusiastic freshness underpinned by the gentle sweetness of white peach flesh; after aeration, the character becomes more floral, and notes of hawthorn subtly guide the tasting towards a palate marked by a minerality reminiscent of the clay-limestone bedrock of Chablis. The sharp tension of the palate is enveloped in the freshness of a lovely spring fruit, evolving towards a beautiful lingering finish. Approaching the Chablis Grand Crus in stature, the Chablis Premier Cru Mont de Milieu offers a broad nose with subtly buttery notes. An earthy minerality, built on a smoky base of flint and oyster shells, completes the nose. The generous palate conjures up a basket of fruits such as apple, pear and lemon, carrying the wine towards a long, balanced finish. The Chablis Grand Cru Les Clos from Pinson evokes a toasty quality that blends elegantly with a lovely fruit, underpinned by an almost spicy, earthy minerality. This richness also engages the senses on the palate with a harmonious composition combining an expressive body with a persistent nervous energy. This union augurs well for the years to come and future tastings of this Grand Cru de Chablis, which will age gracefully for at least 10 to 12 years.
