Domaine Pinson now has 14 hectares of vineyards, including 2 hectares of new plantings added in 2012. Domaine Pinson has an impressive 7 hectares of Chablis Premier Cru vineyards in the Fourchaume, La Forêt, Montmain, Mont de Milieu, Vaillons, and Vaugiraut climats, plus 2.5 hectares of Chablis Grand Cru in the renowned Les Clos climat, considered the most prestigious of the Grands Crus and the best suited to aging. The Pinson family has a deep love for the vines and the soils of Chablis. Every effort is made to obtain the ripest, healthiest grapes possible, from removing excess shoots to improve airflow around the vines and combat potentially harmful moisture, to carefully managed treatments and green harvesting. After being harvested by hand, the grapes are sorted twice, then transported to the presses by conveyor belt to avoid damaging them. Since 2003, Domaine Pinson has had a computer-controlled, temperature-regulated tank room, enabling precise, optimal winemaking. Domaine Pinson thus produces quality Chablis wines each year, combining minerality and tension with a fruity, citrusy foundation. Even the Chablis Villages opens with exuberant freshness, supported by the sweetness of white peach flesh. With aeration, it becomes more floral, and subtle hawthorn notes lead to a palate marked by minerality reminiscent of Chablis’s clay-limestone bedrock. The palate’s crisp tension is wrapped in the freshness of lovely spring fruit, leading to a lingering finish. Rivaling the Chablis Grand Crus, the Chablis Premier Cru Mont de Milieu has an expansive nose with subtle buttery notes. An earthy minerality, underpinned by smoky flint and oyster shell, completes the bouquet. The generous palate evokes a basket of fruit—apple, pear, and lemon—and carries the wine to a long, balanced finish. Pinson’s Chablis Grand Cru Les Clos has a toasted character that blends elegantly with lovely fruit and an earthy, almost spicy minerality. This richness also delights the palate, with a harmonious combination of expressive body and persistent verve. This balance bodes well for future tastings of this Chablis Grand Cru, which will age beautifully for at least 10 to 12 years.
