History of Domaine de Chassorney - Frédéric Cossard

The history of Domaine de Chassorney begins in 1996, when Frédéric Cossard, son of a dairy farmer, decides to realize his dream of becoming a winemaker. After a career as a wine broker, where he develops in-depth knowledge of Burgundy terroirs, Frédéric, accompanied by his partner Laure, settles in Saint-Romain. They begin with a few ares of vines in the appellations of Saint-Romain, Auxey-Duresses, and Savigny-les-Beaune. Over the years, the estate has expanded to reach 10 hectares today, covering prestigious appellations such as Pommard, Volnay, Nuits-Saint-Georges, and Bourgogne-Hautes Côtes de Beaune.

In 2006, Frédéric and Laure diversified their activities by creating SARL Frédéric Cossard, a négociant house that allows them to vinify organic grapes from legendary climats such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Chambolle-Musigny, Vosne-Romanée, as well as crus from Beaujolais, Jura, and Languedoc. This dual activity – estate and négociant – reflects their commitment to enhancing terroirs while respecting a natural philosophy. In 2022, Frédéric handed over Domaine de Chassorney to Aurélien Verdet, a winemaker who shares the same values, while continuing his négociant activities under his own name. This transition marks a new era for the estate, while preserving its heritage of excellence.

Terroirs and Vineyards of Domaine de Chassorney - Frédéric Cossard

Domaine de Chassorney spans 10 hectares of vineyards, mainly located in the Côte de Beaune, with parcels in Saint-Romain, Auxey-Duresses, Pommard, Volnay, and Bourgogne-Hautes Côtes de Beaune. These terroirs, rich in limestone, clay-limestone, and marly-limestone soils, give the wines a distinctive minerality and aromatic complexity. The grapes from the négociant activity come from renowned climats in the Côte de Nuits (such as Nuits-Saint-Georges or Chambolle-Musigny) and the Côte Chalonnaise, as well as from granitic soils of Beaujolais.

The grape varieties are typically Burgundian: Pinot Noir for reds and Chardonnay for whites, with vines averaging 40 years old, ensuring excellent concentration. For the négociant cuvées, there is also Aligoté, Gamay (Beaujolais), Savagnin (Jura), as well as Bourboulenc, Grenache Blanc, and Muscat (Languedoc). The vines are cultivated according to biodynamic principles, with horse plowing, homeopathic treatments based on essential oils, and minimal use of copper and sulfur. The harvests, carried out manually at full maturity in late October, preserve the integrity of the grapes, essential for natural vinification.

Vinifications at Domaine de Chassorney - Frédéric Cossard

Frédéric Cossard's philosophy is based on minimal intervention, both in the vineyard and in the cellar, to let the terroir express itself. Vinifications are entirely natural, without added exogenous yeasts, sulfur, or thermoregulation. For reds, a pre-fermentation maceration of 3 to 9 days precedes fermentation with stems for 5 to 6 weeks, followed by malolactic fermentation in tanks. Red wines are aged in oak barrels for 12 to 15 months, although Frédéric is increasingly experimenting with concrete eggs, Georgian qvevris, and glass wine globes to minimize the influence of wood.

For whites, the musts undergo a two-week cold pre-fermentation, followed by fermentation in barrels for about 8 months. Filtration is done by gravity, and the wines are bottled without added sulfur, ensuring incomparable purity and liveliness. This rigorous approach, inherited from Frédéric's experiences in the dairy industry, produces wines that faithfully reflect their origin, with rare elegance and frankness.
