The Champagne Métisse Brut Nature from Olivier Horiot expresses the chalky terroirs of Les Riceys. This brut nature, a blend of Pinot Noir and Pinot Blanc, captivates with its aromas of citrus and flint, a saline and taut palate. Ideal with seafood or sushi.
A family estate rooted in the hillsides of the Côte des Bar, where the viticultural heritage combines with a quest for purity and respect of the terroir.
- Terroir: Eight plots of Les Riceys, on Kimmeridgian chalk soils, shaping wines of chalky minerality and characteristic tension.
- Winemaking: Organic and biodynamic methods, extended aging on lees, and subtle blending to reveal the most natural expression of the grape varieties.
Tasting notes for Olivier Horiot Métisse Brut Nature
To the eye: A pale golden robe, of crystalline clarity, animated by a stream of fine and persistent bubbles, betraying a silky texture and a discreet elegance.
On the nose: First fresh aromas of lime and pink grapefruit, followed by deeper notes of toasted brioche, flint and a saline touch, like a sea breeze over aromatic herbs.
On the palate: A lively and precise attack, where the taut acidity balances with a chalky minerality, before a long, saline finish carried by a remarkable purity.
Serve between 8 and 10°C, in a Champagne flute to preserve the finesse of the bubbles and the aromatic complexity.
