On the Kimmeridgian soils of Celles-sur-Ource, Pierre Gerbais’s Champ Viole Chardonnay Extra Brut showcases Chardonnay (1989) blended in a solera (2011). Vinified in stainless steel, it offers minerality, citrus, and silky bubbles. Ideal with seafood or fresh cheeses, it can age for 3 to 5 years.
A family estate rooted in the slopes of Celles-sur-Ource, where Chardonnay flourishes on a Cistercian terroir steeped in history.
- Terroir: Kimmeridgian clay-limestone soils on a south-facing mid-slope—a distinctive mineral and saline signature in Côte des Bar.
- Winemaking: A precise method combining tradition (a perpetual solera since 2011) and modern techniques (stainless steel, indigenous yeasts) for taut, elegant champagnes.
Tasting notes for Pierre Gerbais Champ Viole Chardonnay Extra Brut
Appearance – A pale gold color with green highlights and crystalline clarity, where fine, persistent bubbles form a silky ring.
On the nose – Lively lime and pink grapefruit aromas come first, followed by deeper notes of hawthorn blossom and linden, before a saline touch evokes flint and struck stone.
On the palate – A texture both creamy and taut, driven by electric acidity that accentuates chalky minerality; the long, saline finish leaves an impression of purity and mineral freshness.
Serve at 8–10°C in a narrow champagne flute to preserve its tension and aromas.
Non-vintage
A blended cuvée in which the perpetual solera (since 2011) smooths out climatic variations to offer a faithful expression of Celles-sur-Ource’s terroir.
- Aging potential: 5 to 8 years; store in a cool place (12–14°C), away from light.
