All wines from Château Chalon in Jura
Controlled Appellation of Jura, which bears the name of the village where its wine is produced, in the south of the region. Small in size, but great in reputation for its Vin Jaune, produced exclusively from the Savagnin grape variety, and with a higher alcohol content than the yellow wines of other Jura appellations, 12° instead of 11.5°. The white wine is aged for 6 years and 3 months in barrels, without topping up, which gradually develops a film of yeast, in the style of Sherry. The result is a golden wine, with aromas of walnut and curry, bottled in 62 cl bottles, the clavelin, with significant aging potential and which perfectly accompanies Bresse chicken or Comté cheese. The main producers are Jean Macle, Berthet-Bondet, Philippe Butin and Baud Père et Fils.
