Domaine Macle is an undisputed reference of the Chateau Chalon appellation, and it is Laurent and his sister Chrystelle who have succeeded Jean Macle at the helm of the family estate — an iconic figure of the Jura, often considered "the pope of vin jaune". Domaine Macle was established in 1850 and its vineyard spans 11 hectares of particularly steep hillsides. Chardonnay accounts for 80% of the vineyard and Savagnin for 20% of its surface area, but in vin jaune, only Savagnin exists, as it represents the quintessential Jurassian grape variety, predisposed on its blue marl soils to elicit great gustatory emotions.

The philosophy of the domaine Macle lies in the expression of the terroir and the vintage. Without losing the iconic style of the Macle house, one will note some aromatic nuances and quite different structures depending on the years, but to obtain a fine wine, it is necessary to prioritize its terroir, even at the risk of taking certain risks and being declassified. The blending and declassification choices in certain vintages are always in the service of excellence, and for all these reasons, the domaine Macle maintains exemplary consistency. The domaine Jean Macle completed its organic conversion in 2015, and Laurent Macle forbids himself any use of phytopharmaceutical products. In the cellars, alcoholic fermentation starts naturally with indigenous yeasts and malolactic fermentation also takes place in vats. Once the savagnin juices have been transformed into Château-Chalon, a long barrel-ageing phase in oak barrels begins for 6 years. This step is crucial as it will give the wine its entire aromatic framework, thanks to the veil of yeasts that form on the wine in the barrels (thus protecting it from oxidation), and the Macle family is an expert in this matter. The yellow wines are very complex, without being dominated by marked oxidative aromas. Walnut and curry are present on the first nose, followed by fruity, spiced and floral aromas that are the remarkable and singular expression of great yellow wines, such as for example the excellent vintage 2010. In terms of conservation, such wines retain exceptional energy over several decades. The Côtes-du-Jura from the domaine Jean Macle, with a strong dominance of Chardonnay, is of very great purity and has a structure as balanced and elongated as the very finest white wines of Burgundy. The Macvin is a liqueur wine made from savagnin juices fortified with Jura fine, in the typically Jurassian tradition. The domaine Jean Macle is at the pinnacle of Jura wine production, and is to be recommended without moderation.
