Domaine Macle is an undisputed benchmark for the Chateau Chalon appellation. Laurent and his sister Chrystelle succeeded Jean Macle, an iconic figure of the Jura often considered “the pope of vin jaune,” at the helm of the family estate. Domaine Macle was founded in 1850, and its vineyards cover 11 hectares of particularly steep hillsides. Chardonnay accounts for 80% of the vineyard and Savagnin for 20%, but only Savagnin is used to make vin jaune. It is the quintessential Jura grape variety, ideally suited to the estate’s blue marl soils and capable of delivering remarkable tasting experiences.

Domaine Macle’s philosophy centers on expressing terroir and vintage. While retaining the house’s signature style, its wines show subtle differences in aroma and structure from year to year. Producing a fine wine means putting terroir first, even if that involves taking risks or having a wine declassified. Decisions about blending and declassification in certain vintages are always made in pursuit of excellence, helping Domaine Macle maintain exemplary consistency. Domaine Jean Macle completed its conversion to organic farming in 2015, and Laurent Macle uses no crop-protection chemicals. In the winery, alcoholic fermentation begins naturally with indigenous yeasts, and malolactic fermentation also takes place in tanks. Once the Savagnin juice has become Château-Chalon, it begins six years of aging in oak barrels. This stage is crucial to the wine’s aromatic profile: a veil of yeast forms on the wine in the barrels, protecting it from oxidation. The Macle family are experts in this process. Their vins jaunes are highly complex without being dominated by pronounced oxidative aromas. Walnut and curry emerge first on the nose, followed by fruit, spice and floral aromas—the remarkable, distinctive expression of great vins jaunes, as the excellent 2010 vintage demonstrates. These wines retain exceptional vitality for several decades. Domaine Jean Macle’s Côtes-du-Jura, made predominantly from Chardonnay, has remarkable purity and a structure as balanced and long as that of the greatest white wines of Burgundy. Macvin is a liqueur wine made from Savagnin juice fortified with fine du Jura, in the traditional Jura style. Domaine Jean Macle stands at the pinnacle of Jura winemaking and comes highly recommended.
