The TOP winemakers of Jura

But from his early days through to the 2017 vintage, he worked alone and vinified barely a third of his production, delivering the remainder of his grapes to the local cooperative (the fruitière vinicole de Voiteur). Having decided to take the plunge with the 2018 vintage and henceforth vinify his entire production, he is now surrounded by a team of 7 people, and can thus devote himself to the production of his single-vineyard cuvées. Of the 10 ha, 7 ha are planted with Savagnin, his favourite grape variety for both its origins and its aromas; complemented by 2 ha of Chardonnay, and 1 ha with 2 red varieties: Pinot Noir and Poulsard. A trained oenologist, François Rousset Martin is dedicated to expressing the terroir character of the renowned plots around Château Chalon, and even though his attraction to Savagnin is clear, he vinifies the other grape varieties with equal talent. Among the cuvées, the Côte du Jura Chardonnay Croix Sarrant offers a delicate nose of pear, mirabelle plum and coriander, with slightly smoky accents, and on the palate the wine is straight and taut, very energetic, delivering a saline finish accompanied by beautiful bitter notes. The Puits St Pierre cuvée is a Savagnin from an amphitheatre-shaped plot on grey marl soils. It is a very elegant wine, of great finesse, with richness and volume, developing aromas of citron, walnut and crème caramel, evolving towards slightly rooty notes such as gentian and sage. Endowed with a long, refined finish on candied lemon, and driven by a sharp acidity, this wine can be enjoyed over the next 5 years. On the red Jura wines side, the Côte du Jura Pinot Noir cuvée 909 is crafted in the style of the greatest Pinot Noirs from Burgundy. The name of this cuvée is a nod to the 910 cuvée from Mâconnais producer Julien Guillot. The Pinot Noir vines here are planted on clay-limestone soils, genuinely reminiscent of those in Burgundy. The wine is flavoursome, indulgent and delicately spiced, with aromas of small red fruits that unfold with finesse on the palate, and silky, very delicate tannins. Its finish is long and sapid. The Côte du Jura Poulsard Les Vignasses offers a fairly light garnet colour (5-week maceration), with a very delicate nose of red fruits, strawberry, and a floral character. On the palate the wine is very immediate, suave and rather focused on finesse, with a slight vegetal note on the finish, accompanying a beautiful length. Indulgent, this wine is a treat to which it is hard not to succumb. The wines of François Rousset Martin are artist's wines, worthy of the attention of connoisseurs.
