Upon her arrival in the Alpilles at Saint-Rémy-de-Provence, Dominique Hauvette gave her name to the estate. In 1988, advised by Eloi Dürrbach of the Trevallon estate, she carried out her first harvest on the mere 2 hectares of vines on the estate. From the very beginning, she produced wines she intended to be of quality and worthy of ageing. 30 years after settling there, the winemaker still follows her instincts, working in biodynamics and vinifying without added sulphur, in cement amphorae for red wines, across the now nearly 17 hectares of vineyard at Domaine Hauvette, perfectly maintained and situated on clay-limestone soils.
An outstanding winemaker, Dominique Hauvette fully respects the authenticity of her terroirs to produce magnificent Provence red wines, crafting thoroughbred and intense cuvées such as the Cornaline cuvée (grenache, syrah, cabernet-sauvignon) or the Améthyste cuvée (predominantly cinsault, complemented by carignan and grenache), with delicate aromas and exceptional finesse. Among the reds, the Roucas cuvée is the most approachable, with aromas of red fruit jam and a fresh, mentholated finish. The colourful and vinous Provence rosé Petra brings us genuinely close to the taste of the terroir. White wine production is more limited at Hauvette, but these great Provence white wines are rich and full-bodied with noble bitterness: true gastronomic wines. The energetic Jaspe cuvée from Domaine Hauvette, made entirely from Roussanne, is all discretion and nuance, with subtle floral and anise notes. The Dolia cuvée (Clairette, Marsanne, Roussanne) is aged in a concrete egg and delivers a superb texture, accompanied by a saline finish and a delicate, lingering bitterness. Such white wines are particularly well-suited to a region like Provence. True to Dominique Hauvette's wishes, her wines age perfectly and gracefully; one need only taste them in great vintages such as 2001 and 1998 to be convinced. It is at around fifteen years of age that these wines have the most to tell us and truly reveal the measure of Dominique Hauvette's winemaking talents.
