The wines of the Hauvette estate

Upon his arrival in the Alpilles in Saint-Remy-de-Provence, Dominique Hauvette gave his name to the estate. In 1988, advised by Eloi Durrbach from the Trevallon estate, she carried out her first harvest, on only 2 ha of vineyards on the estate. From the start, she produced wines that she wanted quality and aging. 30 years after its installation, the winemaker still follows her intuitions by working in biodynamics and vinifying without added sulfur, in amphorae of cement for red wines, as it is now almost 17 ha of vineyard of the Hauvette estate, perfectly maintained and located on calcareous clay soils.

Unparalleled winemaker, Dominique Hauvette fully respects the authenticity of her terroirs to produce magnificent red wines from Provence, developing racy and intense cuvees such as the Cornaline cuvee (grenache, syrah, cabernet-sauvignon) or the Amethyst cuvee (dominated by cinsault, supplemented with carignan and grenache), with delicate aromas and exceptional finesse. On the red side, the Roucas cuvee is the easiest to access, with aromas of red fruit jam and a fresh, minty finish. The colorful and vinous rose from Provence Petra really brings us closer to the taste of the terroir. The production of white wine is more limited at Hauvette, but these great white wines from Provence are fat on the palate on noble bitters: wines of gastronomy. The energetic Jaspe cuvee from the Hauvette estate, in pure Roussanne, is discreet and nuanced with subtle floral and anise notes. The Dolia cuvee (Clairette, Marsanne, Roussanne) is raised in concrete egg, and delivers a superb texture, accompanied by a saline finish and a delicate persistent bitterness. Such white wines stand out particularly in a region like Provence. Like Dominique Hauvette's wishes, his wines age perfectly and happily; it is enough to be convinced to taste them in great vintages like 2001 and 1998. It is at the age of fifteen that these wines have the most to tell us and give the true measure of the talents of winemaker of Dominique Hauvette.
