History of Domaine Antonio Quari

The history of Domaine Antonio Quari is intimately linked to that of a passionate man, trained in the school of the most demanding. Originally from Italy and settled in Burgundy, Antonio Quari learned the intricacies of winemaking at the legendary Domaine Prieuré Roch in Premeaux-Prissey, under the guidance of Henry-Frédéric Roch and Yannick Champ. This rigorous transmission, founded on respect for the grape, the soils, and the rhythms of nature, shaped his sensibility and his exacting standards.

In 2017, buoyed by this exceptional training, Antonio Quari decided to take the plunge: to produce his own wine, under his own name, alongside his role as cellar master at Prieuré Roch. His Latin motto, Non Progredi est Regredi, is inscribed on his labels as a promise to the attentive drinker. It is a craft-driven, intimate endeavour in which every bottle bears the personal signature of a winemaker driven by the pursuit of truth and finesse.

Terroirs and Vines of Domaine Antonio Quari

The terroir chosen by Antonio Quari to express his vision of Pinot Noir is located in Ladoix, the most northerly appellation of the Côte de Beaune. The lieu-dit Les Briquottes reveals brown calcareous soils scattered with flint limestone debris, conducive to producing wines that are at once precise, structured, and delicate. This plot, planted in 1976, is home to Pinot Noir vines of around fifty years of age, whose naturally low yields concentrate the aromas.

The grapes come from a vine at Domaine Perrin, farmed organically for more than ten years by one of the rare strictly natural winemakers of Ladoix. Antonio Quari chooses an ethical and sustainable supply, attentive to biodiversity, the microbial life of the soils, and respect for the vine's natural cycles. This dialogue between an exceptional terroir, mature vines, and organic viticulture forms the very foundation of the domaine's cuvées.

Winemaking at Domaine Antonio Quari

In the cellar, Antonio Quari faithfully applies the winemaking principles that made Domaine Prieuré Roch's reputation. The harvest is brought in as whole bunches, without destemming, in order to preserve the full aromatic complexity of the Pinot Noir and to bring tension and freshness to the wine. Fermentation is spontaneous, conducted solely with the indigenous yeasts present on the berries and in the cellar, without any addition of selected yeasts.

During maceration, the work on the caps is carried out by foot pigeage and gravity-fed remontage — ancestral gestures that allow for the gentlest extraction. Ageing then extends over ten months in multi-vintage barrels, never new, so that the wood does not mask the expression of the fruit and terroir. Bottling is carried out without fining or filtration, with intentionally very low doses of sulphur. This minimally interventionist philosophy leaves the wine its full purity, depth, and capacity to tell the story of its origin.

The Cuvées of Domaine Antonio Quari

Ladoix Les Briquottes: this is the sole cuvée signed by Antonio Quari, and arguably one of the most confidential of the entire Côte de Beaune. Crafted from fifty-year-old Pinot Noir vines from the lieu-dit Les Briquottes in Ladoix, farmed organically for over a decade, this cuvée is distinguished by its absolute authenticity. Vinified as whole bunches, with spontaneous fermentation, aged ten months in multi-vintage barrels, bottled without fining or filtration and lightly sulphured, it reveals a finely chiselled nose of crushed strawberries, subtly spiced, lifted by floral notes and a mineral touch typical of the limestone soils of the area. The palate is ample, deep, and silky, carried by fine tannins and great energy. Its extremely limited production makes it a rare wine, sought after by discerning Burgundy enthusiasts.

Ladoix Les Briquottes Non Progredi Est Regredi: in certain vintages (notably 2020), the cuvée explicitly bears the winemaker's motto on its label, Non Progredi Est Regredi. Sourced from the same plot and vinified according to the same minimalist protocol as the main cuvée, it expresses the domaine's signature with even greater intensity: controlled density, silky harmony, balance between vibrant fruit and a thoroughbred tannic structure. This mention on the label acts as a manifesto, a reminder of Antonio Quari's permanent quest for excellence and his refusal of stagnation in the craft of winemaking.
