Château Haut Bailly

The Château Haut Bailly vineyard extends over thirty hectares in the Bordeaux region, in Pessac Léognan. A relatively recent estate (dating from the 19th century), it benefits from the status of Grand Cru Classé de Graves.

Thanks to its soil located on a gravel ridge combined with iron pan, the slope inclination and the distribution of ditches, the estate's vines benefit from optimal drainage.

The grape variety distribution is typically according to the following percentages: 65% Cabernet Sauvignon, 25% Merlot and 10% Cabernet Franc. The average age of the vines is 35 years. Harvests are done in the traditional manner with respect for the land. The estate refuses the use of herbicides and practices sustainable farming. Harvesting is done by hand in order to best respect the terroir.

At Château Haut Bailly, quality is sought over quantity: rigorous care is associated with grape selection and the vinification process. The estate has always sought to limit its production volumes in order to favor the quality of its wines. The aging process involves fermentation followed by maceration of approximately 21 days in temperature-controlled vats, followed by barrel aging of approximately 15 months.

Each year, the château produces 80,000 to 100,000 bottles of Château Haut Bailly, and 40,000 to 60,000 bottles of its second wine La Parde de Haut Bailly. The first wine is often recognized for its perfectly balanced and harmonious profile, with smooth texture and perfectly integrated tannins, ideal for long aging.
