The Chablis 2023 from Domaine Louis Michel & Fils expresses the Kimmeridgian terroirs of Chablis. This Chardonnay vinified in stainless steel reveals aromas of pear and white flowers, a lively acidity and a chalky touch. Tense and silky, it pairs with oysters and fish. To enjoy now or within 2 to 4 years.
A family estate rooted in the limestone hillsides of Chablis since 1850, where tradition meets an uncompromising pursuit of purity.
- Terroir : The Kimmeridgian and Portlandian soils, rich in marine fossils, impart a chalky minerality and a unique saline tension to the Chardonnay.
- Vinification : Aged exclusively in stainless steel tanks to preserve aromatic precision, with no oak influence, and controlled yields inspired by organic practices.
- In the glass : Pale yellow robe with green highlights, displaying a silky and crystalline clarity.
- On the nose : First lively and citrusy, it opens onto notes of Williams pear, delicate white flowers, then deepens towards a touch of white liquorice and a saline hint reminiscent of sea spray.
- On the palate : The attack is tense, carried by a lively acidity and a chalky minerality, while the texture, both elegant and precise, gives way to a long, saline finish where hints of candied citrus linger.
Serve between 10 and 12°C in a Burgundy-style white wine glass to reveal its full purity.
A vintage marked by vibrant freshness, where the balance between ripeness and mineral tension is expressed with rare precision.
- Ageing potential : Store for 5 to 8 years in a cool cellar (10-12°C) away from light, to allow its saline complexity to fully develop.
