History of Domaine Louis Michel & Fils

The story of Domaine Louis Michel & Fils begins in 1850, when the Michel family settled in Chablis and planted their first vines on this exceptional territory. Since then, six generations have succeeded one another at the helm of the estate, passing down from father to son not only the viticultural heritage, but also an unswerving vision of wine: that of a discreet artisan, in service of his terroir.

As early as the 1980s, the estate made a bold and forward-thinking decision: to abandon oak barrel ageing entirely. Where other Burgundy appellations magnify the influence of wood, Louis Michel took the opposite stance, convinced that the typicity of Chablis lies in its sharp minerality and aromatic purity — qualities that oak can only diminish. This choice, upheld for more than forty years, has made the estate a world reference for tank ageing.

Today, Jean-Loup and Guillaume Michel, the sixth generation of winegrowers, perpetuate this heritage while adding their own sensitivity to it. Committed to reasoned viticulture that respects the environment, they have led the estate towards HVE3 certification (Haute Valeur Environnementale — High Environmental Value) and, since the 2023 vintage, towards organic certification.

Terroirs and Vines of Domaine Louis Michel & Fils

The vineyard of Domaine Louis Michel & Fils extends across the four appellations of the Chablis wine region — Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru — all situated within a radius of two kilometres around the winery. This proximity between vine and cellar is a rare privilege: grapes harvested at optimal ripeness reach the press in the best possible conditions, preserving all their freshness and aromatic integrity.

The subsoil of Chablis is unlike any other. It rests on two major geological formations: the Kimmeridgian and the Portlandian. The Kimmeridgian, composed of marly limestones and clays scattered with oyster fossils 150 million years old (the Exogyra virgula), imparts to the wines that characteristically iodine-tinged minerality, like a breath of the sea captured in stone. The Portlandian, more calcareous and less clayey, provides a suppler structure, suited to the Chablis and Petit Chablis appellations.

The family vineyard boasts a remarkable average vine age of approximately 50 years. Some plots are even older: the vines of the Premier Cru Vaulorent were planted in 1964, while those of the legendary Butteaux Vieilles Vignes date back to 1954. These old vines, with their naturally limited yields, produce grapes of rare concentration and complexity.

The vineyard is cultivated with care and humility. The rows are grassed over to encourage biodiversity and limit erosion, the pruning method is adapted to each plot, and the soils are worked mechanically to avoid the use of herbicides. The objective is always the same: to encourage the roots to plunge deep into the earth to capture the very essence of the Kimmeridgian terroir.

Vinifications of Domaine Louis Michel & Fils

The winemaking philosophy at Louis Michel rests on a simple yet demanding principle: intervene as little as possible. The winemaker must step aside and allow nature, the terroir and time to do their work.

From the moment the grapes are received, mastery begins. Alcoholic fermentations are conducted slowly and naturally, relying solely on the indigenous yeasts present on the berries — no exogenous yeasts are added. These long fermentations in temperature-controlled tanks preserve the aromatic finesse and allow for the fullest expression of the terroir. Malolactic fermentation is likewise spontaneous, with no artificial triggering.

The ageing process follows, a crucial phase at Louis Michel. Carried out entirely in stainless steel tanks, without the use of any barrels whatsoever, it lasts 8 to 12 months for the Petit Chablis and Chablis, and 12 to 20 months (or even longer for certain cuvées such as the Séchets) for the Premier and Grand Crus. Throughout this entire period, the wines rest quietly on their fine lees, naturally gaining texture and complexity, without any excessive stirring.

Stabilisation is achieved through moderate and prolonged cold treatment. Bentonite fining is carried out if necessary. A single light filtration concludes the process prior to bottling. Every additional handling step is deliberately avoided. This restraint on the part of the winemaker explains why the wines of Louis Michel, sometimes reserved in their youth, blossom remarkably with time: the Premier Crus can be cellared for 8 to 15 years, the Grand Crus well beyond 10 years.

Petit Chablis and Chablis

Petit Chablis, Sourced from plots situated on Portlandian plateaux on the periphery of the appellation, this Petit Chablis represents the ideal introduction to the world of Louis Michel. Lively, crunchy, with a herbaceous freshness and a beautiful lemony tension, it is best enjoyed in its early years to make the most of its vivacity. 

Chablis, The Chablis Village is the estate's flagship cuvée, the one that best illustrates its philosophy. On a well-exposed Kimmeridgian terroir, the Chardonnay delivers a white wine of great purity: a nose of white-fleshed fruits (peach, pear), citrus nuances, crystalline minerality on the palate. Roundness is present, yet always kept in check by a fresh and precise acidity.

The Premier Crus

Montée de Tonnerre, Considered the most prestigious of Chablis' Premier Crus, Montée de Tonnerre is sometimes referred to as the 8th Grand Cru. Planted on the right bank of the Serein, in direct continuity with the Grand Crus, on deep, well-drained Kimmeridgian soil with a South-West exposure, this wine benefits from exceptional sunshine. Planted in 1974, the vineyard produces a powerful, complex Chablis of great length. After aeration, it reveals a perfect balance between mineral freshness and very ripe fruit. The palate is warm, salivating and iodine-tinged, with a spiced cinnamon finish. Aged 18 to 20 months in tank. Cellaring: 8 to 15 years.

Vaulorent, A remarkable enclave within the Fourchaume climat, on the right bank of the Serein, Vaulorent is sourced from a vine planted in 1964 on deep, brown soils rich in white marls with fossil oysters. Its very pure nose reveals seductive notes of rose, white pepper and lychee. The palate is voluptuous, rich, balancing butter and caramel, enhanced by a mentholated touch. A generous, enveloping Premier Cru. Cellaring: 5 to 15 years.

Séchets, Located on the left bank of the Serein, in the Vaillons valley, this Premier Cru is distinguished by its more marly characteristics and hard limestones embedded in a clayey matrix. Planted in 1971, it presents aromas of grapefruit, gunflint and white flowers. On the palate, it is a taut, dense wine of great purity, with a pronounced minerality enveloped in notes of white-fleshed fruit. One of the most finely chiselled Premier Crus in the range, deserving of long cellaring. Aged 20 to 24 months. Cellaring: 5 to 15 years.

The Chablis Beauregard 2014 cuvée is still somewhat reserved but precise, with a structured profile, flavours of lemon zest and a juicy sap (17/20 RVF). The Chablis 1er Cru Butteaux 2014 from Thomas Pico shows greater firmness and breadth. It is a vibrant wine, with fine energy and fruit. The ageing is perfectly calibrated (17.5/20 RVF). The Chablis Premier Cru Côte de Jouan 2012 has a very lovely fruit and a lush palate. One bites right into the flesh of the apricot. The palate is full and dense, with a fine acidity and very fine balance (16/20 B&D). The Chablis Vaillons 2014 from Pattes Loup is sourced from purchased grapes and has been produced for three years (16.5/20 RVF). These wines are enjoyed relatively young, though they have an ageing potential of 5 to 8 years, or even more for the best vintages. In the Chablis Village appellation, Domaine Pattes Loup offers in 2012 a wine with a finely chiselled palate and very pure aromas of juicy fruit. It is an indulgent, salivating and irresistible wine. It even offers a potential for improvement in bottle, a rare quality for a village wine (15.5 B&D). This wine can be kept for 3 to 5 years. Notable vintages from Domaine Pattes Loup by Thomas Pico: 2014, 2012, 2010, 2008, 2005, 2002. This estate receives very good scores and reviews (2 stars RVF and 3 stars B&D). Furthermore, the estate acquired a new cellar in 2014, which should help the wines to improve further still. An estate to watch!

Butteaux, This Premier Cru is sourced from four plots spread across the Butteaux slopes on the left bank. It yields a floral and mineral wine, lively and elegant, of remarkable power and length, ideally suited for cellaring and pairing with seafood. Cellaring: 5 to 15 years.

Forêts, One of the three terroirs of the Premier Cru Montmain, Forêts offers a Chablis of great elegance and rare purity. The nose is expressive and refined, combining nuances of oyster shells with notes of fresh grass. On the palate, a long, straight mineral line of admirable directness. Cellaring: 5 to 15 years.

Montmain, Another expression of the Montmain climat, this Premier Cru offers a floral and mineral Chablis, with a lively and elegant palate of remarkable power and length. Louis Michel & Fils is the only estate in the appellation to offer all three terroirs of Montmain (Montmain, Forêts and Butteaux) as separate cuvées, providing a fascinating parcel-by-parcel journey.

The Grand Crus

Grand Cru Vaudésir, This 1.17-hectare Grand Cru was planted progressively between 1955 and 1968 on a Kimmeridgian terroir of perfect balance between limestone and clay, resting on marly fossil oyster deposits, at mid-slope, full South. Without added yeasts and aged a minimum of 16 to 18 months in tank, the Vaudésir unfolds on the palate with buttery and brioche-like aromas of rare indulgence. An ample, structured Grand Cru that delights even the most discerning palates. Cellaring: over 10 years.

Grand Cru Les Clos, Les Clos is the largest and one of the most renowned of the seven Grand Crus of Chablis. The estate's plot, ideally positioned at mid-slope and exposed full South, rests on a Kimmeridgian terroir of perfect balance between limestone and clay. This Grand Cru can appear austere and virile in its youth, but it proves in reality to be highly expressive on the palate, with a spectacular mineral dominance complemented by notes of white pepper and nutmeg. A wine of sheer power and complexity, built to defy time. Aged 18 to 20 months in stainless steel tanks. Cellaring: over 10 years.

Grand Cru Grenouilles, The absolute jewel of the range, Grenouilles is the smallest of the seven Grand Crus of Chablis, with only 9 hectares in total across the appellation. Louis Michel cultivates just 50 ares, for a confidential production of approximately 3,000 bottles per vintage. The plot is situated in the upper part of the slope, on a moderately deep, clayey, brown Kimmeridgian soil with a South-West exposure, a gentle gradient and exceptional luminosity tempered by the Serein river. Aged 18 to 20 months in stainless steel tanks, this wine — which rewards patience — is a rare blend of power and finesse. It reveals springtime notes of wildflowers, white-fleshed fruit and kiwi, with a perfect harmony between aromatic complexity and minerality. Once aerated, or even decanted, it delivers the full depth of an exceptional terroir. Cellaring: over 10 years, often well beyond 15 to 20 years for great vintages.
