Sourced from the Kimmeridgian soils of Chablis, the Vincent Dauvissat Chablis 2005 is a white wine of rare elegance. Its nose marries white fruits and minerality, while its lively, saline palate captivates with its length. Ideal for cellaring 10 to 15 years, it pairs beautifully with oysters, shellfish, and refined fish dishes.
A family estate rooted in the hillsides of Chablis, where Chardonnay expresses itself with rare precision, shaped by three generations of expertise.
- Terroir : The Kimmeridgian soils, rich in marine fossils, lend the wines a chalky minerality and a characteristic tension, typical of the great Chablis.
- Vinification : Aged in oak barrels, without excess, to preserve the purity of the fruit and the freshness of the terroir, in a style that is both elegant and structured.
Tasting notes for Domaine Vincent Dauvissat Chablis 2005
- In the eye : A pale golden robe, of crystalline clarity, with silver highlights that betray its vivacity and balance.
- On the nose : Aromas of reinette apple and Williams pear intertwine with notes of acacia blossom, before giving way to a saline touch and a flint-like minerality, the signature of the great Chablis terroirs.
- On the palate : A silky attack precedes a vibrant tension, where chalky minerality mingles with a precise acidity, extended by a saline finish of remarkable length.
Serve between 10 and 12°C, in a Burgundy-style white wine glass, to reveal its full complexity.
