Plume is the Jurassian adventure of young Burgundian winemaker Aymeric Geantet. A fifth-generation member of the celebrated Domaine Geantet-Pansiot in Gevrey-Chambertin and former assistant winemaker at the prestigious Domaine Prieuré-Roch, Aymeric launched this personal project dedicated to the Jura in 2021. Working with grapes from Rotalier, in the Sud Revermont, on the emblematic clay-limestone terroirs of the Côtes du Jura, he crafts under the Plume label a range of Vin de France cuvées produced with a commitment to sustainable viticulture and traditional winemaking. His cuvées Origines (white), Savagnin, Pinot Noir and the red Origine bear witness to his talent and his dual Burgundian and Jurassian heritage.
The history of Domaine Plume begins in mythical Burgundy, in Gevrey-Chambertin, the cradle of the Geantet family. Aymeric Geantet belongs to the historic lineage of Domaine Geantet-Pansiot, one of the great names of the Côte de Nuits, founded in 1952 and today internationally renowned for its Gevrey-Chambertin. The young winemaker thus grew up at the heart of the great Burgundian tradition, surrounded by the family expertise passed down from generation to generation. This initial training within the family estate instilled in him rigour, patient observation of the vineyard and precision in winemaking.
But Aymeric does not stop at this family transmission. Keen to broaden his horizons and learn from the very best, he joined the celebrated Domaine Prieuré-Roch, the mythical signature of biodynamic Burgundy, whose wines rank among the most sought-after in the world. For several years, he worked there as assistant winemaker, refining his approach to natural wine and whole-bunch fermentations. This dual training, both classical and avant-garde, led him to simultaneously launch the Plume venture in 2021. His goal is clear: to explore the Jura terroirs in the light of his Burgundian experience, working with the finest producers of Rotalier in the Sud Revermont. The project, still confidential, immediately captivated the most discerning wine lovers and wine merchants, who see in Aymeric Geantet one of the rising stars of the new Jura.
Plume works with grapes sourced primarily from the village of Rotalier, in the Sud Revermont of the Jura. This region, renowned for the quality of its soils and for having given birth to several of the greatest natural wine estates of the Jura (notably those of Jean-François Ganevat or the Labet family), benefits from exceptional terroirs. The soils are characterised by the grey and blue marls of the Lias, as well as calcareous scree and Jurassic outcrops, which give the wines a mineral, saline and incisive signature. The continental climate, marked by significant temperature variations, guarantees slow and precise ripening of the grapes.
The grape varieties bring together the emblematic varieties of the Jura: Chardonnay and Savagnin for the whites, complemented by Pinot Noir for the reds (a variety also found in abundance in the Côte de Nuits, which creates a natural bridge with Aymeric's Burgundian training). Plume is conceived as a sustainable viticulture project, in partnership with Jura winemakers committed to environmentally responsible farming. The harvests are entirely manual, at full maturity, with rigorous sorting in the vineyard. This partnership-based approach, both demanding and creative, allows Aymeric Geantet to benefit from grapes of excellent quality, guaranteeing the aromatic precision sought in his cuvées.
In the cellar, Aymeric Geantet applies a traditional winemaking approach, strongly inspired by his training at Prieuré-Roch. Fermentations are conducted solely with the indigenous yeasts native to the grapes, without any addition of selected yeasts. No oenological additives are used, and the use of sulphur is intentionally minimal. This natural philosophy, inherited from the great Burgundian masters, aims to preserve the authentic expression of each plot and each vintage, without the filter of interventionist oenology.
For the whites, the Chardonnay and Savagnin are vinified and aged according to classic Jura practices, with regular topping up to preserve the freshness of the fruit, or ageing under a veil of yeast depending on the cuvée. For the Pinot Noir, Aymeric often favours whole-bunch vinification, the recognisable signature of Prieuré-Roch, which brings finesse, freshness and aromatic complexity to the wines. Ageing takes place in old oak barrels, sometimes Burgundian, with a controlled proportion of new wood. No fining, no filtering, in an approach of absolute transparency. The result is a recognisable signature, at the crossroads of the great Burgundian style and Jura tradition.
Plume Origines (blanc): the estate's signature white cuvée, in Vin de France, crafted from Chardonnay and Savagnin sourced from the terroirs of Rotalier in the Sud Revermont. Fermentation with indigenous yeasts, ageing in old barrels. Pale golden colour, expressive nose with notes of yellow fruits, white flowers, citrus and a mineral touch, taut and fresh palate balanced by a lovely roundness. An indulgent entry point into the Plume universe, with a signature that is both Burgundian and from the Jura.
Plume Savagnin: a white cuvée in Vin de France, crafted from 100% Savagnin, the king grape variety of the Jura. Vinification in the purest natural spirit, ageing in old barrels. Brilliant colour, aromatic nose with notes of ripe yellow fruits, white flowers, dried fruits and a mineral signature, taut and deep palate with a marked saline character. A precise and confidential expression of the great Jura grape variety, by a Burgundian winemaker in full immersion.
Plume Pinot Noir: a red cuvée in Vin de France, crafted from 100% Pinot Noir sourced from the terroirs of Rotalier. Vinification often with whole bunches, in the lineage of the style learnt at Prieuré-Roch. Ageing in old barrels. Pale ruby colour, floral and fruity nose with notes of cherry, raspberry, violet and hints of spice, silky and fresh palate with a fine tannic structure and a long finish. An exceptional Jura Pinot Noir, shaped by a young-generation Burgundian winemaker.
Plume Cuvée Origine (rouge): a complementary red cuvée in Vin de France, crafted from the red grape varieties of the Jura depending on the vintage (Pinot Noir, Poulsard, Trousseau or as a blend). Respectful winemaking, in the same natural spirit as the other cuvées. Deep ruby colour, fruity and spicy nose, fresh and indulgent palate with the digestible signature typical of Aymeric Geantet's philosophy. A cuvée that is both immediately approachable and precise, extending the Plume adventure into ever more expressive registers.
