At La Combe de Rotalier, in the southern Revermont area of the Jura, just a few metres from the renowned Domaine Jean-François Ganevat, Domaine Buronfosse is one of the finest natural wine estates in contemporary Jura. Founded in 1999–2000 by Peggy and Jean-Pascal Buronfosse, originally from Lyon and Saint-Étienne and trained in agriculture, this intimate 4.5-hectare estate has been farmed using certified organic practices since 2010. Guided in their early years by friends Julien Labet and Jean-François Ganevat, the stars of Rotalier, the couple produces cuvées of remarkable purity from Chardonnay and Savagnin (90% of production) and Pinot Noir, Poulsard, and soon Trousseau for the reds. With a resolutely modern and Burgundian style, the wines are ouillé-topped, refined and delicate, vinified by terroir: Domaine Buronfosse has become an unmissable reference in the new natural Jura.
Domaine Buronfosse was born from the meeting of two passionate individuals: Peggy and Jean-Pascal Buronfosse. Originally from the Jura, they established their estate in the early 2000s with a clear ambition: to produce sincere, lively wines that are true to their terroir. Starting from just a few plots, they gradually built a coherent and demanding vineyard, located primarily around the village of Rotalier, in the southern Jura.
From the very first years, the couple chose a clean approach to viticulture, free from synthetic chemical products, and the most natural winemaking possible. Their approach, still marginal at the time, was part of a broader movement restoring the Jura to its rightful place on the stage of great French wines.
The cuvées of Domaine Buronfosse quickly gained recognition from wine merchants and sommeliers. Their limited production, combined with a precise and energetic style, has made them highly sought-after wines among enthusiasts wishing to make an authentic wine purchase from a committed producer.
The vineyard of Domaine Buronfosse extends across ideally exposed hillsides in the southern Jura, at the crossroads of the Côtes du Jura and Arbois appellations. The soils, composed of marl, limestone and clay, offer a great diversity of expressions, which are fully reflected in the wines.
The emblematic grape varieties of the Jura are worked with extreme care:
The vineyard is managed according to principles close to organic farming: soil cultivation, natural ground cover, controlled yields and hand harvesting. Each plot is considered a living heritage, allowing the production of grapes of exceptional quality — an essential foundation for crafting true grands crus from the Jura.
This careful attention to the vines explains the unique personality of Buronfosse wines: straight, precise cuvées, marked by a strong mineral identity and rare energy.
In the cellar, Peggy and Jean-Pascal Buronfosse apply a minimalist philosophy. Fermentations take place exclusively with indigenous yeasts, without the addition of unnecessary inputs. The wines are aged for extended periods, often in old barrels, in order to gain complexity without ever losing their freshness.
The white wines can be aged in two ways:
The red wines are vinified with great care, favoring gentle extractions and macerations adapted to each vintage. Bottling is carried out with very little sulfite addition, sometimes with none at all, clearly placing the estate's wines within the world of authentic natural wines.
This approach gives rise to cuvées of great drinkability, ideal as wines ready to enjoy, yet equally capable of evolving admirably in the cellar.
An emblematic white wine cuvée, Les Ammonites offers a precise and mineral Chardonnay, marked by notes of citrus, white flowers and a saline finish. A straight and vibrant wine, perfect for discovering the estate's style.
A great Savagnin cuvée aged under a veil, it expresses the full typicity of the Jura: aromas of walnuts, gentle spices and dried fruits. A wine of character, built for the table and for cellaring.
Sourced from a specific plot, this cuvée reveals a fuller, more structured Chardonnay of great depth. It perfectly illustrates the potential of the terroirs of the southern Jura.
On the red wine side, the estate's Poulsard charms with its finesse and vibrant fruit. Light in color but intense in flavor, it is a gourmand and airy wine, highly representative of the Jura identity.
Fuller-bodied, this Trousseau develops aromas of ripe red fruits, spices and a fine tannic structure. An ideal cuvée for lovers of characterful red wines.
Elegant and refined, the Pinot Noir from Domaine Buronfosse offers a silky, well-balanced palate with a beautiful aromatic persistence. A red wine for gastronomy par excellence.
Depending on the vintage and availability, certain cuvées may be offered in magnums and large formats, particularly appreciated for cellaring or special occasions.
The wines of Domaine Buronfosse shine through their great gastronomic versatility. The ouillé white wines, such as Les Ammonites, are ideal companions for grilled fish, shellfish, goat's cheese or roasted poultry.
Savagnin cuvées aged under a veil pair perfectly with aged Comté, chicken with morels or spiced dishes. Their aromatic intensity makes them ideal partners for bold, characterful cuisine.
On the red wine side, Poulsard pairs beautifully with fine charcuterie or summer cuisine, while Trousseau and Pinot Noir match very well with grilled meats, duck breast or pressed-paste cheeses.
Thanks to their natural freshness and balance, Buronfosse wines are equally suited to a casual meal or a gastronomic table.
Domaine Buronfosse has established itself today as one of the major signatures of contemporary Jura. Through respectful viticulture, precise winemaking and a deeply artisanal vision, Peggy and Jean-Pascal Buronfosse craft wines of great sincerity, which have become references for lovers of rare wines and authentic cuvées. Each bottle expresses the soul of a unique terroir and the expertise of a passionate estate.
