At La Combe de Rotalier, in the southern Revermont area of the Jura, just a few metres from the renowned Domaine Jean-François Ganevat, Domaine Buronfosse is one of the finest natural wine estates in contemporary Jura. Founded in 1999–2000 by Peggy and Jean-Pascal Buronfosse, originally from Lyon and Saint-Étienne and trained in agriculture, this intimate 4.5-hectare estate has been farmed using certified organic practices since 2010. Guided in their early years by friends Julien Labet and Jean-François Ganevat, the stars of Rotalier, the couple produces cuvées of remarkable purity from Chardonnay and Savagnin (90% of production) and Pinot Noir, Poulsard, and soon Trousseau for the reds. With a resolutely modern and Burgundian style, the wines are ouillé-topped, refined and delicate, vinified by terroir: Domaine Buronfosse has become an unmissable reference in the new natural Jura.
