Nestled in the heart of the mythical village of Meursault, on the Côte de Beaune in Burgundy, Domaine Fabien Coche is one of the essential references for great Burgundian Chardonnays. Founded in 1940 under the name Coche-Bizouard, this family estate is today run by Fabien Coche, who took over the property in 1997 following in the footsteps of his father Alain and grandfather Julien. Across twelve hectares of vines spread over more than forty plots, the estate cultivates an exceptional mosaic of terroirs across seven prestigious appellations of the Côte de Beaune: Meursault, Pommard, Auxey-Duresses, Monthélie, Saint-Romain, Saint-Aubin and Puligny-Montrachet. Certified organic since 2020, Fabien Coche's wines rank among the finest value-for-money offerings on the Côte de Beaune, a hallmark of the purity and precision of great Burgundian Chardonnays and Pinot Noirs.
The history of Domaine Fabien Coche began nearly a century ago, when Julien Coche, Fabien's grandfather, born into a family of six children, embarked on a career as a cooper before developing a passion for wine and the vine. In the 1930s, he acquired his first plots in Meursault and planted the first vines that would form the heart of the future estate. In the 1960s, his son Alain took over the property and expanded it, patiently completing the vineyard holdings to reach their current twelve hectares. The estate was then known as Coche-Bizouard, a contraction of the paternal and maternal family names.
In 1997, Fabien Coche took over the reins of the family estate and gradually gave it its current name. In 2003, he developed a parallel négociant activity under his own name to complement the range. Deeply attached to his Meursault terroir and proud of his family heritage, Fabien Coche champions an artisanal and accessible vision of Burgundy wine, in sharp contrast to the speculation that has affected the region since the 2010s. Committed to preserving the health of his soils, he has been working organically for several vintages and officially engaged the organic certification process from the 2020 harvest onwards, obtaining it in 2023.
The vineyard of Domaine Fabien Coche covers twelve hectares, of which 90% is owned outright, spread across more than forty different plots — a mosaic of rare diversity. The vines span seven prestigious appellations of the Côte de Beaune, from south to north: Meursault, the historical heart of the estate, Pommard, Auxey-Duresses, Monthélie, Saint-Romain, Saint-Aubin and Puligny-Montrachet. The distribution is well balanced, with approximately 50% in regional Bourgogne and 50% in village and Premier Cru wines, shared equally between Chardonnay and Pinot Noir.
The soils, predominantly clay-limestone with varying compositions depending on the climat, offer a great diversity of expressions and profiles. In Meursault, the upper vines benefit from the bedrock, those in the middle from more generous soil, while those at the bottom reach less dry ground. Since the 2017 vintage, the entire vineyard has been farmed organically, officially certified in 2023, as part of a process that began well before and was carefully considered. Harvesting is entirely manual, with a rigorous selection of bunches at the winery.
In the cellar, Fabien Coche combines tradition with precision. Winemaking is minimally interventionist, in order to preserve the authenticity of each vintage and the typicity of each plot. Fermentations take place on indigenous yeasts, without systematic chaptalization, in full respect of the fruit. For the reds, destemming is generally total, but certain cuvées such as the Auxey-Duresses 1er Cru Les Écusseaux can be vinified with 100% whole clusters, or 50% for the Pommard 1er Cru La Platière.
Ageing takes place in French oak vessels adapted to each cuvée: traditional Burgundian barriques of 228 litres, as well as 500-litre demi-muids for a better ratio between volume and surface contact, and even 2,300-litre foudres for the entry-level cuvées such as the Bourgogne Blanc and Bourgogne Rouge. The proportion of new wood is carefully measured, so as to add structure and ageing potential without masking the fruit. The result is expressed in Chardonnays of great precision, chiselled and mineral, and in elegant, sapid and refined Pinot Noirs, which rank among the finest accessible signatures of the Côte de Beaune.
Bourgogne Aligoté Vieilles Vignes: A tribute cuvée to an emblematic grape variety, this Bourgogne Aligoté comes from a plot of old vines planted in the 1950s in Meursault. Aged in 500-litre demi-muids, the wine offers a detailed texture, mineral salinity, crystalline notes of citrus and pear, great finesse and remarkable intensity.
Bourgogne Chardonnay: A regional cuvée drawn from the blending of nine plots in Meursault, aged in barriques and 500-litre foudres. The wine displays expressive aromas of exotic fruits (passion fruit, apricot), a core of citrus and green apple, supported by fine acidity.
Bourgogne Rouge: A regional Pinot Noir aged in foudre, this red Bourgogne presents fresh, crunchy fruit, a supple and thirst-quenching palate — a perfect reflection of the house style.
Saint-Romain Blanc: A village-level Chardonnay from the Hautes Côtes de Beaune, this white wine offers lovely minerality, aromas of citrus and white flowers, and a taut, fresh palate.
Saint-Aubin Blanc: A village-level Chardonnay from Saint-Aubin, close to Montrachet, this wine stands out for its beautiful tension, saline minerality and aromatic precision.
Auxey-Duresses Blanc: A village-level Chardonnay from Auxey-Duresses, fresh and balanced, marked by white fruits, flowers and lovely purity.
Monthélie Blanc: A more understated cuvée of Chardonnay from Monthélie, neighbour of Meursault. The wine delivers a taut, fine and delicate palate.
Puligny-Montrachet: A prestigious cuvée from the queen appellation of Burgundian Chardonnays. Brilliant colour, floral and mineral nose, an ample, chiselled and elegant palate.
Meursault Villages: The estate's signature cuvée, drawn from two plots in adjacent climats to the north of Meursault. Beautiful intensity and texture, density of fruit (pear, citrus), well-integrated oak adding depth of toasted hazelnut, fine acidity, and a long, lemony finish.
Meursault Les Chevalières: A single-vineyard cuvée drawn from three plots in this emblematic lieu-dit of Meursault. The wine combines richness, minerality and tension, with notes of lemon, white fruits and a discreet touch of oak.
Meursault Les Luchets: A rarer village-level cuvée, revealing fine aromas of citrus and pear with a hint of smoky, spiced oak. A structured, fresh and elegant palate, with a long, precise finish and fine ageing potential.
Meursault 1er Cru Les Charmes: An emblematic Premier Cru of Meursault, this wine offers crystalline precision, notes of candied lemon, remarkable concentration, and subtle hints of hazelnut and spice.
Meursault 1er Cru Goutte d'Or: A Premier Cru of great renown, situated mid-slope. The wine is distinguished by its aromatic richness, aromas of exotic fruits, honey and almond, and an ample palate supported by fine acidity.
Monthélie Rouge: A light and fruity village-level Pinot Noir, marked by fresh red fruits, a supple palate and excellent drinkability.
Meursault Rouge: An original red wine in Pinot Noir from Meursault, vinified 100% destemmed. An elegant aromatic profile of cherry and raspberry with some noble vegetal notes, a direct, juicy, pure and refined palate.
Auxey-Duresses 1er Cru Les Écusseaux: A rare and understated Premier Cru (just 0.6 ares), vinified with 100% whole clusters. The wine stands out for its lightness, elegance, aromas of red cherries and its ethereal structure. Exceptional precision, silky texture and remarkable drinkability.
Pommard 1er Cru La Platière: A Premier Cru from Pommard vinified with 50% whole clusters. The wine offers fine, structured material, notes of cherry and raspberry, a crunchy texture and a refined finish.
