The Graves appellation is located southwest of the city of Bordeaux, on the left bank of the Garonne. It covers 3,600 hectares, with two-thirds of its production being reds made from Cabernet Sauvignon (approximately 70%) and Merlot, and one-third whites made from Sémillon (which brings richness, notes of honey and dried fruits), and Sauvignon (citrus notes and liveliness). Protected by the Landes forest, this terroir is planted on a subsoil of clay, sand, alios and limestone, and a soil of gravel and pebbles rolled by the waters of ancient courses of the Garonne, whose quartz reflects the sun's rays and contributes to better ripening of the grapes. The reds are rather austere, mineral, smoky and refined, capable of long aging, while the whites present notes of flowers and citrus, which evolve towards candied fruit, acacia, pine, over time. The Pessac-Léognan appellation in the northern Graves was created in 1987, and its wines can benefit from the Graves appellation. The classified growths of Graves are located there (Château Haut-Brion, Château Carbonnieux, Domaine de Chevalier, Château Couhins, Château de Fieuzal, Château Haut-Bailly, Château Pape Clément, Château Smith Haut Lafitte...).
