In the north of Roussillon, this appellation produces, along with Banyuls, the most highly rated Vins Doux Naturels, made from the Grenache grape variety. Produced from schistous terrains at altitude, these wines meant for long aging are deep purple, powerful, tannic, with aromas of black fruits, licorice, and cocoa if produced in rimage (aging protected from oxidation) or rancio (if deliberately stored in open air to accentuate oxidation aromas, similar to nuts, undergrowth, and dried fruits). The main producers are Mas Amiel and Domaine de la Préceptorie.
