History of Domaine Vincent Dancer

The history of Domaine Vincent Dancer begins in 1996, when Vincent, originally from Alsace, decided to take over the family vines in Chassagne-Montrachet. Initially destined for a career as an engineer, he developed a passion for viticulture and settled in Burgundy to pursue a training in viticulture and oenology in Beaune. From the very beginning, Vincent adopted a rigorous and respectful philosophy, working his vines with care and patience. After seven years of experimentation, he released his first cuvées in 2003, marking the start of a meteoric rise.

In 2016, Théo Dancer joined his father, bringing new energy while preserving the family heritage. In 2021, Théo took the reins of the estate, continuing the pursuit of excellence initiated by Vincent. The first estate in Chassagne-Montrachet to obtain organic certification in 2012, Domaine Vincent Dancer is today recognized worldwide for its vibrant wines, faithful to their origins. Terroirs and Vines of Domaine Vincent Dancer

Domaine Vincent Dancer spans 6.3 hectares of vines, spread across the prestigious appellations of Chassagne-Montrachet, Puligny-Montrachet, Meursault, Pommard and Beaune. These exceptional terroirs, predominantly planted with Chardonnay for the whites and Pinot Noir for the reds, benefit from calcareous and clay soils, conducive to the expression of fine and mineral wines. Certified organic since 2012, the vines are cultivated with meticulous care. Soil work, often carried out by hand or with the help of horses in the Premier Cru plots, preserves biodiversity and microbiological balance. The introduction of cover crops, high trellising and agroforestry, notably in Nantoux in the Hautes-Côtes, reflects the estate's commitment to sustainable viticulture. Vinifications of Domaine Vincent Dancer

Winemaking at Domaine Vincent Dancer is rooted in a non-interventionist philosophy, where the winemaker's hand steps back to let the fruit and the terroir speak. The grapes, harvested by hand, are handled with artisanal precision. For the whites, the bunches are crushed and then pressed in a vertical press. The juices ferment without the addition of sulfur, with indigenous yeasts, in Chassin barrels (20 to 50% new wood depending on the cuvée). The fermentations, sometimes very long, proceed naturally, without lees stirring or temperature manipulation. After 18 months of aging, the wines rest for a few months in stainless steel tanks before being bottled without fining or filtration, with a minimal dose of sulfur.

For the reds, the approach is equally refined: the destemmed grapes undergo a short maceration, a gentle pressing and aging in barrels with very little new wood. This process yields fruity, easy-drinking and elegant reds, perfect to accompany a wide range of dishes.
