History of Domaine Caroline Morey

Caroline Morey comes from an illustrious family of winegrowers in Chassagne-Montrachet. Eldest daughter of Jean-Marc Morey and granddaughter of Albert Morey, she grew up within the family vineyard. In 2014, upon her father's retirement, she inherited part of the estate and founded her own operation.

Since then, she has established herself in the Burgundian wine landscape, alongside her husband Pierre-Yves Colin, himself a renowned winemaker and founder of the Domaine Pierre-Yves Colin-Morey, known for his white wines of great precision. Although sharing an ultra-modern winery in Chassagne-Montrachet, each maintains a unique approach to winemaking. Caroline Morey is committed to preserving the authentic character of each plot by practising reasoned viticulture and minimising interventions in the cellar.

Terroirs and Vines of Domaine Caroline Morey

Domaine Caroline Morey cultivates 7 hectares of vines spread across several prestigious appellations: Chassagne-Montrachet, Santenay and Beaune. Its grape varieties consist of approximately 60% Chardonnay and 40% Pinot Noir.

The vines, whose age ranges between 10 and 70 years, are cultivated according to environmentally respectful practices, with careful soil work and an approach aimed at sustaining the plantings over the long term. Pruning methods vary according to the grape varieties: Chardonnay is trained using Guyot pruning, while Pinot Noir alternates between Guyot and Cordon de Royat.

Vinifications of Domaine Caroline Morey

Caroline Morey adopts a winemaking philosophy in which the expression of the terroir is paramount. Her approach is based on minimal intervention to allow the characteristics of each climat to express themselves fully.

White wines

Gentle pressing and fermentation in 350-litre barrels, of which approximately 25% are new oak.

Ageing on fine lees for 15 to 20 months depending on the crus and the vintages.

No lees stirring, allowing the wines to preserve their purity and mineral tension.

Use of natural cork stoppers and bottle waxing for better preservation.

Red wines

Fermentation in tanks for between 15 and 25 days with minimal interventions.

Punch-downs and pump-overs adjusted according to the vintage and the terroir.

Proportion of whole-bunch harvest varying according to the plots and the conditions of the year.

Oak barrel ageing aimed at preserving the finesse and elegance of the fruit.

Beaune 1er Cru Grèves: A complex and harmonious wine, offering a beautiful expression of Chardonnay on a renowned terroir.

Santenay Blanc: A flattering and charming wine, with notes of candied lemon and subtle oak.
