The LES POETE estate was created by Guillaume Sorbe, and it is located in Preuilly (in the Cher) close to the AOC Reuilly and Quincy. The Poëte estate bears the family name of Guillaume Sorbe's great-grandmother (hence the absence of an S in Poëte), and the winemaking adventure began in 2001 with the planting of vines featuring 3 main grape varieties: Sauvignon Blanc, Pinot Gris and Pinot Noir.

Wishing to produce haute couture wines, Guillaume Sorbe gave his vines time to acclimate to their terroir, and it was not until nearly 10 years later, in 2011, that he decided to market his 1st vintage. By highlighting the finest terroirs of the villages of Reuilly and Quincy, without claiming their AOC designation, it can be said that his wines are indeed of a very high standard, and that they compete without pretension with the neighbouring prestigious appellations such as Sancerre or Pouilly Fumé. The wines of Domaine Les Poëte are labelled Vin de France. The Domaine Poete is farmed organically and follows the Demeter specifications, without being eligible for certification, due to its beehives whose wax frames are not built by the bees themselves. Of the estate's 17 ha, Guillaume Sorbe's vineyard accounts for just under 6.5 ha (including 5.1 ha of Loire blanc), which always leaves the possibility of expanding the surface area. The winemaking is managed meticulously: over 12 to 18 months in small vats or barrels of 400 and 600 L, as each of the 28 plots is vinified and aged separately. In the range of Domaine Poete's cuvées, one will find "Le S des Poëte", "Argos", "Orphée", "Toison d'Or" and "Odyssée". "Le S des Poëte" comes from 1.5 ha of Sauvignon Blanc vines located in Touraine. It is an exuberant and finely crafted wine, of great precision, which retains its brilliance with a vinous length. The "Argos" cuvée reveals a limpid and pure texture etched into the ripe fruit of the Sauvignon, concentrated and at the same time delicate, with soft aromas of pear and hawthorn. The "Orphée" cuvée, also a Sauvignon, is a composed and mature wine of great precision on the palate. "Toison d'Or" is a beautiful Pinot Gris cuvée — brioche-like, mineral, and offering a lovely saline persistence. Finally, "l'Odyssée" is a pure Pinot Noir cuvée from Reuilly (Loire rouge), with aromas of blackcurrant and spices, and the grape variety's soft, lush and rather measured character. This cuvée makes for a very fine food wine. The quality of the wines is remarkable, and the specialist press has already widely acclaimed Domaine Les Poëte.
