History of Domaine François Mikulski

The history of Domaine François Mikulski is one of returning to one's roots and a passion for wine passed down through generations. François Mikulski, born in 1963 in Brussels to a Polish father, Lieutenant Mieczyslaw Mikulski, and a Burgundian mother, Thérèse Boillot, grew up between two cultures. His summers spent in Meursault with his uncle Pierre Boillot, a respected winemaker, awakened in him a calling for viticulture. Trained by this experienced uncle, François took over the family estate in 1991, marking the beginning of an exceptional winemaking adventure.

In 1988, François married Marie-Pierre, daughter of François Germain, owner of Château de Chorey-Les-Beaune. Together, they founded Domaine François Mikulski in 1992, starting with 4.5 hectares of vines leased from the Boillot family. Their first harvest, during the great 1992 vintage, was a success that laid the foundation for their reputation. Despite difficult vintages like 1993 and 1994, marked by mildew and frost, François quickly demonstrated his talent by producing balanced and expressive wines. Today, the estate extends over nearly 9 hectares, mainly in Meursault, and is managed with the help of their daughter Anna and their son-in-law Thomas Boccon, ensuring the continuity of this family enterprise.

Terroirs and Vineyards of Domaine François Mikulski

The Burgundy terroir, shaped by 180 million years of geological history, is at the heart of the identity of Domaine François Mikulski wines. The complex soils, resulting from the erosion of the Morvan block and the collapse of the Bressan block, offer unique diversity. The estate's parcels, located mainly in Meursault, rest on varied subsoils: fine river alluvium in the low areas, limestone gravels and platy rocks on the hillsides, or silts infiltrated into fissured rocks. This geological richness gives the wines a distinctive minerality and faithful expression of each climat.

The estate cultivates a mosaic of parcels, some of which are emblematic, such as the Meursault 1er Cru Les Charmes, planted in 1913, or the Bourgogne Aligoté from 1929 and 1948. The vines, cultivated according to the principles of non-certified organic farming, benefit from homemade compost, meticulous plowing, and environmentally respectful phytosanitary products. Yields are controlled (45-50 hl/ha for whites, 35 hl/ha for reds) to ensure healthy and concentrated grapes, reflecting the authenticity of Burgundian terroirs.

Vinifications at Domaine François Mikulski

Vinification at Domaine François Mikulski is an art that combines tradition and modernity. Each step is designed to preserve the purity and elegance of the wines. The grapes, carefully sorted in the vineyard and in the cellar, are entirely destemmed. For whites, gentle pneumatic pressing is followed by rigorous settling. Fermentations, conducted with indigenous yeasts, last 3 to 4 months in cellars carved into the rock, where temperatures remain cool (6-8°C in winter). The wines are then aged 12 to 18 months in oak barrels, with only 20% new wood to avoid masking the expression of the terroir. Fining, a key step, brings aromatic precision and grace to the wine.

For reds, vinification follows a similar process: selective sorting, 15 to 18 days of vatting with indigenous yeasts, and aging in barrels in the same spirit as the whites. The use of high-performance equipment, such as peristaltic pumps and pneumatic presses, ensures consistent quality. This meticulous care, given to every detail over 30 months, produces wines of incomparable purity and elegance, ready to be enjoyed or to age gracefully.

The Cuvées of Domaine François Mikulski

Bourgogne Aligoté

From 1.5 hectares of vines planted in 1929 and 1948. Aged in tanks on lees, it is bottled in July to preserve its fruitiness. With its fresh aromas, it is ideal as an aperitif or with seafood.

Bourgogne Côte d'Or Chardonnay 

From 1.5 hectares of vines planted in 1986 and 2005, this cuvée is aged 10 months in barrels and 2 months in tanks. Its proximity to the Meursault appellation gives it length and richness, perfect for accompanying fish and white meats.

Bourgogne Côte d'Or Pinot Noir 

From 1.3 hectares of vines from 1929 and 1980, this wine offers red fruit aromas and excellent aging potential (4-5 years). It pairs with grilled meats.

Produced from vines near Nolay and Meloisey, this wine rests on clay-limestone soil, offering beautiful freshness and fruity notes.

Meursault Les Tillets 

Produced on 0.18 hectares at 340 m altitude, this wine reveals notes of pear, citrus, and dried fruits. Perfect with hot shellfish, it improves over 5 to 10 years.

Meursault Village 

Blend of parcels (1.5 hectares), this wine offers a complex aromatic palette (honey, hazelnut, exotic fruits) and excellent cellaring (5-10 years). Ideal with creamy dishes.

Meursault Limozin 

From 0.15 hectares of 65-year-old vines, this round and mineral wine accompanies shellfish and white meats, with aging potential of 5 to 10 years.

Meursault Clos du Pré de Manche 

Produced on 0.3 hectares (first harvest in 2019), this wine with notes of bergamot and musk pairs with bold dishes like lacquered pork.

Meursault Meix Chavaux 

From 0.47 hectares, this mineral wine is perfect for hot shellfish and improves over 5 to 10 years.
