With a production limited to around 20,000 bottles per year, the estate's wines, primarily pinot noirs and aligotés, captivate with their elegance, aromatic complexity and authentic expression of Burgundy's climats.
Founded in 2016 in Nuits-Saint-Georges, Domaine Pierre-Olivier Garcia was born from the friendship between Pierre-Olivier Garcia and Mathieu Moron, two local natives passionate about wine and driven by a common ambition: to revolutionize viticultural practices in a region rooted in tradition. Pierre-Olivier, armed with his viticulture studies in Beaune and the influence of his father, a renowned geologist and expert on Burgundian terroirs, partnered with Mathieu to take over family plots. Together, they brought to life an ambitious project, blending innovation and respect for nature.
In 2020, Pierre-Olivier took sole control of the estate, consolidating his vision of sustainable viticulture and almost clockwork-precise vinification. In less than a decade, the estate went from being labeled "crazy" to "visionary," thanks to wines that captivate palates worldwide. Today, the estate's cuvées, distributed in 33 countries, are acclaimed by connoisseurs and sell out in just a few days, testifying to a meteoric success built on quality and authenticity.
Domaine Pierre-Olivier Garcia cultivates approximately 5.5 hectares of vines, mainly in Nuits-Saint-Georges, with emblematic plots such as Les Herbues, Les Charmois, and Les Grandes Vignes. These terroirs, located in the heart of the Côte de Nuits, benefit from rich and varied soils, conducive to the expression of Pinot Noirs and Aligotés. Additionally, Pierre-Olivier completes his range through "haute couture" négociant work, selecting organic grapes from rigorously monitored partner vineyards.
Committed to uncertified organic farming, the estate emphasizes biodiversity and polyculture. To counter the effects of climate warming, Pierre-Olivier has raised his vines to 1.80 m, even 2 m, to create protective shade while facilitating cluster sorting. Between rows, legumes such as peas, clovers, or Chinese radishes are sown to decompact soils, enrich biodiversity, and reduce water needs. This agro-ecological approach, still rare in Burgundy, reflects the estate's commitment to sustainable balance between man and nature.
Vinification at Domaine Pierre-Olivier Garcia is true goldsmith's work, marked by a unique technique: "berry by berry." This method, developed by Pierre-Olivier during his studies, consists of cutting each grape berry by hand with scissors, preserving the pedicel to prevent premature juice flow. Performed at low temperatures (5°C) to protect aromas, this practice requires tremendous organization: up to 90 people mobilized for nearly a month during the 2023 harvest, and 30 people to process a single barrel in one day.
In the winery, Pierre-Olivier adopts a "mille-feuille" approach, combining one-third whole cluster, one-third destemmed grapes, and one-third "berry by berry" grapes. This complex alchemy gives birth to wines of exceptional aromatic finesse, marked by floral notes, a silky structure, and rare complexity. The vinifications, conducted without sulfur during alcoholic fermentation, favor minimal intervention to allow the fruit and terroir to express themselves fully. The aging, lasting 12 months in oak barrels without new wood, preserves the authenticity of the grape varieties, particularly Pinot Noir and Aligoté.
