The History of Domaine Chanterêves

The story of Domaine Chanterêves began in 2010, when Tomoko Kuriyama, originally from Japan, and Burgundy-born Guillaume Bott joined forces to create an exceptional small-scale wine merchant business. Their meeting in 2005, during Tomoko’s internship at Domaine Simon Bize, marked the start of a fruitful collaboration driven by a shared passion for authentic wines. Tomoko, who studied enology at Geisenheim University in Germany, brings German rigor and a Japanese sensibility to the project. She honed her craft with renowned winemakers including Paul Fürst, Peter Jakob Kühn and Georg Breuer before overseeing winemaking at Domaine Friedrich Altenkirch. Guillaume developed his expertise in Burgundy, first at Etienne Sauzet, where he immersed himself in the world of Chardonnay, then as cellar master at Domaine Simon Bize, where he mastered Pinot Noir.

Inspired by natural-wine figures such as Frédéric Cossard and Philippe Pacalet, Tomoko and Guillaume take a minimalist approach focused on fruit purity and the expression of terroir. Their small-scale wine merchant business, initially based on buying organic grapes, reached a turning point in 2020 with the acquisition of 4.9 hectares of vines in the Hautes Côtes de Beaune, Chorey-lès-Beaune and Savigny-lès-Beaune. This milestone transformed Chanterêves into an estate in its own right, cultivating its own plots using organic and biodynamic practices. The Terroirs and Vines of Domaine Chanterêves

Located in Savigny-lès-Beaune, in the heart of the Côte de Beaune, Domaine Chanterêves has access to exceptional terroirs carefully selected for their potential. Its 4.9 hectares of vines, acquired in 2020, are spread across appellations including Hautes Côtes de Beaune, Chorey-lès-Beaune and Savigny-lès-Beaune, with plots planted to Chardonnay, Pinot Noir and Aligoté. Among these treasures are 17 ares of century-old Aligoté vines in Ladoix, a variety the estate cherishes and brings to life with flair.

The vines are grown organically, with uncertified biodynamic practices and particular attention to soil health. Tomoko and Guillaume use plant-based treatments, as well as natural remedies such as skim milk against powdery mildew and minimal doses of copper against downy mildew. For Chardonnay, they combine sulfur and potassium bicarbonate to reduce inputs. The soils are tended with care: light cultivation around the vines, using a crawler tractor or experienced horses such as Gilbert Simond’s, minimizes disturbance to the terroir. Between April and July, the estate hand-sows a mix of 13 plant species to enrich biodiversity, improve water retention and loosen the soil. These sustainable practices allow the grapes to fully express the richness and diversity of Burgundy’s terroirs.

Winemaking at Domaine Chanterêves

Chanterêves’ winemaking philosophy centers on minimal intervention, allowing the terroir and fruit to express themselves without embellishment. The white wines, made chiefly from Chardonnay and Aligoté, are vinified with precision: the grapes are lightly crushed, then pressed slowly for six hours. Fermentation uses native yeasts, sometimes started with a pied de cuve, and the wines age for 12 months in mostly used 228-, 350-, 400- or 600-liter barrels. They are then blended and aged in stainless-steel tanks to preserve freshness, without fining or filtration and, if necessary, with only a minimal addition of SO2 (15 mg/L maximum).

For its Pinot Noir red wines, Chanterêves favors whole-cluster fermentation (100% since 2014) in wooden vats with native yeasts. Pump-overs are performed gently by hand, followed by light foot-treading toward the end of fermentation. After 12 months in used barrels, the wines are racked and aged on their lees in stainless-steel tanks for a further period, without fining or filtration. This artisanal approach gives the wines a silky texture and aromatic purity, highlighting the finesse of the tannins and the vibrancy of the fruit.
