History of Domaine Chanterêves

The Domaine Chanterêves adventure begins in 2010, when Tomoko Kuriyama, originally from Japan, and Guillaume Bott, a native of Burgundy, combine their talents to create an exceptional micro-négociant. Their meeting in 2005, during Tomoko's internship at Domaine Simon Bize, marks the beginning of a fruitful collaboration, driven by a shared passion for authentic wines. Tomoko, trained in oenology at the University of Geisenheim in Germany, brings Germanic rigour and Japanese sensitivity to the project. She perfected her craft with renowned winemakers such as Paul Fürst, Peter Jakob Kühn and Georg Breuer, before directing the vinifications at Friedrich Altenkirch estate. Guillaume, for his part, forged his expertise in Burgundy, first at Étienne Sauzet, where he immersed himself in the world of Chardonnay, then as cellar master at Domaine Simon Bize, where he mastered Pinot Noir.

Inspired by natural wine figures such as Frédéric Cossard and Philippe Pacalet, Tomoko and Guillaume adopt a minimalist approach, focused on the purity of the fruit and the expression of the terroir. Their micro-négociant, initially based on the purchase of organic grapes, takes a decisive turn in 2020 with the acquisition of 4.9 hectares of vines in the Hautes Côtes de Beaune, Chorey-lès-Beaune and Savigny-lès-Beaune. This milestone marks the transformation of Chanterêves into a full-fledged domaine, cultivating its own parcels according to organic and biodynamic practices. Today, Chanterêves is celebrated as a Burgundian revelation, producing elegant and vibrant wines, acclaimed by critics and enthusiasts.

Terroirs and Vineyards of Domaine Chanterêves

Located in Savigny-lès-Beaune, in the heart of the Côte de Beaune, Domaine Chanterêves benefits from access to exceptional terroirs, carefully selected for their potential. The 4.9 hectares of vines, acquired in 2020, are spread across appellations such as Hautes Côtes de Beaune, Chorey-lès-Beaune and Savigny-lès-Beaune, with parcels planted with Chardonnay, Pinot Noir and Aligoté. Among these treasures, there are 17 ares of century-old Aligoté vines in Ladoix, a grape variety that the domaine cherishes and sublimates with brilliance.

The vines are cultivated in organic agriculture, with uncertified biodynamic practices, and particular attention paid to soil health. Tomoko and Guillaume rely on phytotherapy, using natural treatments such as skimmed milk against powdery mildew and minimal doses of copper against downy mildew. For Chardonnay, they combine sulphur and potassium bicarbonate to reduce inputs. The soils are worked with care: light ploughing around the vines, performed by a tracked tractor or by expert horses such as those of Gilbert Simond, guarantees maximum respect for the terroir. Between April and July, the domaine manually sows a mixture of 13 plant species to enrich biodiversity, improve water retention and decompact the soils. These sustainable practices allow the grapes to fully express the richness and diversity of Burgundian terroirs.

Vinifications of Domaine Chanterêves

The Chanterêves vinification philosophy is based on minimal intervention, allowing the terroir and fruit to express themselves without artifice. White wines, mainly made from Chardonnay and Aligoté, are vinified with precision: the grapes are lightly crushed, followed by a long pressing of 6 hours. Fermentation is done with indigenous yeasts, sometimes initiated by a pied de cuve, and ageing lasts 12 months in barrels of 228, 350, 400 or 600 litres, mostly used. The wines are then blended and aged in stainless steel tanks to preserve their freshness, without fining or filtration, with minimal addition of SO2 (15 mg/L maximum) if necessary.

For red wines, made from Pinot Noir, Chanterêves favours whole-cluster vinification (100% since 2014), carried out in wooden vats with indigenous yeasts. Pumping-over is performed gently by hand, and light foot pigeage is practiced at the end of cuvaison. After 12 months of ageing in used barrels, the wines are racked and aged on lees in stainless steel tanks for an additional period, without fining or filtration. This artisanal approach gives the wines a silky texture and aromatic purity, emphasizing the fineness of the tannins and the vibrancy of the fruit.

The cuvées of Domaine Chanterêves

Domaine Chanterêves offers a varied range of cuvées, all marked by remarkable elegance and precision. Here are the main cuvées:

Bourgogne Aligoté Bas des Ees 

From a parcel at 470 m altitude, this wine reveals aromas of baked apple and a fine reduction. Its fleshy texture, carried by delicate bitterness, offers a saline and energetic finish. An Aligoté of rare complexity.

Bourgogne Aligoté Les Chagniots 

This wine, planted on deep alluvial soils, exudes notes of almond paste and dried fruits. Its lively and rooted palate extends to a lemony finish, full of freshness.

Cultivated on stony soil at 470 m, this Aligoté seduces with its tangy fruit and floral notes of jasmine. Its tension and length on the palate make it an exceptional white wine.
