Great-grandfather Bize, the founder of Domaine Bize, dedicated his life to winemaking, and the Domaine Bize transmitted itself from generation to generation, so much so that in the 1950's Domaine Bize stopped buying grapes (negoce) in order to deal directly with its clients (amateurs, cavistes, restaurants). Thanks to rigorous winemaking, the Domaine Bize's reputation began to grow, so much were their wines qualitative they outshined all other in the appellation. In 1972, Patrick Bize (4th generation) succeeded his father and began to expand their cellars up until he died prematurely in 2013, leaving his wife Chisa and his sister Marlène to head the Domaine Bize and make the wines. they succeeded in doing so with the same meticulousness. The Domaine Simon Bize has 22 hectares and 16 wines. The Bourgogne white and Bourgogne red are exceptional as are the Savigny-les-Beaune village and the premiers crus are all high class wines in both colors and amongst the finest value for money in Burgundy, without forgetting the rare and superb Aloxe Corton "Le Suchot", situated in a Clos facing the Château de Corton. Domaine Simon Bize also produces a distinguished and rare Corton Charlemagne that is made from vines planted in 1938 (on 0.2 hectares) as well as a magnificent Latricières Chambertin (0.32 ha) made from vines ageing from 40 to 60 years. Both wines represent the top of what Burgundy can offer. The philosophy of the Domaine Simon Bize is based on the respect of terroir: care for the vines and whole bunch harvests at optimal maturity. In the cellar, the fermentations start from whole bunches and generate naturally, spending 4 to 6 weeks in vats. Ageing is moderate and according to each wine, anywhere from 6 to 12 months, with sporadic batonnages without controlling malolactic fermentation or filtering. The reds are vinified with a large percentage of whole bunches and develop the character and texture of more "prestigious" appellations, but it is best to wait anywhere from 5 to 8 years as they can offer an extraordinary refinement with even minimal age. The whites are precise and floral and age wonderfully. Their wines offer remarkable value for money especially in light of the excellence of the wines, but their small production limit their availability.
