The Belargus Savennières Ruchères Monopole 2021 from Domaine Belargus, a dry Chenin Blanc born on a chalky terroir. Cultivated biodynamically and aged in barrels, it offers notes of white fruits and an elegant minerality. On the palate, lively and silky, with a long finish. Ideal with fish or cheeses.
Nestled in the heart of Anjou, this estate embodies an exacting pursuit of terroir, guided by a biodynamic approach and a scrupulous respect for the soils.
- Terroir: The vines flourish on the schistose hillsides of Savennières, where Chenin Blanc draws its minerality and tension, facing the Loire.
- Vinification: Spontaneous fermentations in oak barrels, controlled yields and minimal intervention to reveal the purity of the fruit and the terroir.
To the eye: A golden robe with green highlights, of silky clarity and a chalky density that heralds a generous substance.
On the nose: Aromas of crisp green apple, acacia blossom and candied lemon zest intertwine with a saline touch, like a mineral breath rising from the schist.
On the palate: A smooth yet taut texture, carried by a lively acidity and a stony minerality that stretches into a saline and persistent finish.
Serve between 10 and 12°C in a Burgundy-style white wine glass to enhance its complexity.
