The Billecart-Salmon Cuvée Elisabeth Salmon 2012 rosé, from the chalky soils of Champagne, blends Chardonnay (55%) and Pinot Noir (45%) from Chouilly and Mareuil-sur-Aÿ. Aged 115 months, it reveals red fruits, citrus and minerality. Perfect through 2040, it pairs beautifully with scallops or duck breast.
Since 1818, this family-owned Champagne house has combined tradition and innovation, rooted in the heart of the Vallée de la Marne, where it crafts wines of timeless elegance.
- Terroir : Grand crus from the chalky soils of the Côte des Blancs and the hillsides of the Montagne de Reims, where mineral-rich soils lend the wines their tension and purity.
- Vinification : A meticulous approach, combining extended aging on lees with precise blending, for cuvées of rare finesse.
Tasting notes for Billecart-Salmon Cuvée Elisabeth Salmon 2012 rosé
To the eye – A rosé robe with salmon-hued reflections, silky and luminous in texture, like a veil of silk over a chalky canvas.
On the nose – First, fresh notes of redcurrant and raspberry, followed by a hint of blood orange, then deeper aromas of faded rose and toasted bread, lifted by a subtle mineral salinity.
On the palate – A lively and precise attack, where the tension of the Chardonnay blends with the roundness of the Pinot Noir, carried by a chalky minerality and a long, elegant, saline finish.
Serve between 11 and 12 °C, in a champagne flute or a white wine glass to reveal its full complexity.
Vintage 2012
