Billecart-Salmon Le Sous Bois, champagne brut from the terroirs of the Montagne de Reims and the Côte des Blancs, unites Chardonnay, Pinot Meunier and Pinot Noir. Vinified in barrels, it reveals a golden robe, aromas of dried fruits and toasted notes. On the palate, silky and mineral, with hints of brioche. To enjoy now or keep for 10 years, it sublimes white meats and seafood.
A family house since 1818, Billecart-Salmon cultivates excellence and discretion at the heart of Champagne, between Mareuil-sur-Aÿ and the great terroirs.
– Terroir: Chalky and calcareous soils of the Premiers and Grands Crus of the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne – a mosaic of terroirs that gives birth to wines of rare precision.
– Vinification: Aging in oak barrels and long maturation on lees, for champagnes where mineral tension dialogues with the richness of the wood.
Tasting notes for Billecart-Salmon Le Sous Bois wine
To the eye – A golden robe with pale highlights, threaded by a ribbon of fine and persistent bubbles, like a lacework of light.
On the nose – First candied citrus and ripe white fruits, then notes of roasted hazelnut and fresh butter, before a saline touch underlines the chalky minerality of the terroir.
On the palate – A silky and vibrant texture, carried by a lively acidity and a mineral tension that stretches into a long and creamy finish, where warm brioche and soft spices intertwine.
Serve at 10 °C in a champagne flute to preserve its freshness and brilliance.
