The Blanc de Blancs Extra Brut Le Cotet by Jacques Lassaigne, sourced from the chalky hillsides of Montgueux, expresses Chardonnay with precision. Vinified in barrels, it offers notes of lemon and apple, a delicate bubble and a saline finish. Ideal with seafood, it improves with age.
A family estate rooted in Montgueux, where Chardonnay has flourished on chalky hillsides for generations.
- Terroir: Chalky soils of Montgueux, in Champagne, where limestone imparts a vibrant minerality to the wines.
- Vinification: Aging in barrels and on lees, for precise, taut cuvées that are true to the terroir.

On the nose – Aromas of lime and crisp apple, followed by notes of ripe pear and a hint of toasted brioche, lifted by a chalky salinity.
On the palate – Elegant and taut texture, carried by a lively acidity and a saline minerality, leading to a long and precise finish.
Serve at 10°C in a Champagne flute to preserve its purity.
