The Blanc de Blancs Le Cotet Extra Brut from Jacques Lassaigne, from the chalky soils of Montgueux, reveals a mineral Chardonnay. Fermented in stainless steel and barrels, it offers notes of white fruits and citrus. Its saline palate, without dosage, improves over 10 years. Perfect with seafood.
Nestled on the hillsides of Montgueux, this family estate embodies the demands of an exceptional terroir and the transmission of artisanal expertise.
- Terroir: Chalky soils of Montgueux, poor and well-drained, where Chardonnay draws a saline minerality and a characteristic tension.
- Vinification: Aged in barrels and tanks, without dosage, to preserve the purity of the fruit and the expression of the terroir.
Tasting notes for the wine Jacques Lassaigne Blanc de Blancs Le Cotet Extra Brut
To the eye – Pale gold robe with green highlights, of a silky clarity and a fine, persistent effervescence.
On the nose – Aromas of white flowers and fresh lime, followed by notes of crisp apple, toasted hazelnut and a saline touch reminiscent of sea air.
On the palate – A lively and precise attack, carried by a taut acidity and a chalky minerality, before a long and saline finish of crystalline elegance.
Serve between 8 and 10°C in a narrow champagne flute to concentrate the aromas.

A blend of several years, this cuvée combines the freshness of recent wines with the complexity of the reserves, for a balance between tension and maturity.
