Jacques Lassaigne’s Blanc de Blancs 2017 draws its minerality from the clay-and-chalk soils of Montgueux. Fermented in stainless steel and aged eight years on the lees, this Brut Nature reveals citrus and almond notes with a saline, silky palate. Ideal with seafood or for keeping until 2030.
A family estate rooted in Montgueux, where Chardonnay flourishes on chalk-and-clay slopes.
- Terroir: The chalky and clay soils of the Aube shape mineral, taut wines.
- Winemaking: A natural approach, fermentation in stainless steel and extended aging on the lees for a pure expression of the vintage.
Tasting notes for Jacques Lassaigne Blanc de Blancs Millésime 2017
Appearance – A pale-gold color of crystal clarity, threaded with a stream of fine, persistent bubbles like lacework of light.
On the nose – Fresh, vibrant aromas of Meyer lemon and green apple open onto notes of ripe pear and white peach before revealing a saline touch evocative of oyster shell and warm croissant.
On the palate – A silky texture is supported by lively acidity and chalky minerality, while flavors of candied citrus, salted butter and toasted hazelnut carry through to a long, saline finish, like an echo of damp limestone.
Serve between 8 and 10 °C in a champagne flute or white wine glass to appreciate its full complexity.
