The Jean Macle Côtes du Jura 2019, born on the calcareous hillsides of Château-Chalon, blends Chardonnay and Savagnin aged under veil. Aromas of apple, flowers and walnuts, with a mineral touch. On the palate, silky and lively, with a chalky finish. Perfect with fish or a comté until 2027.
Nestled in the heart of Château-Chalon, this family estate embodies the soul of the Jura through wines of rare precision, shaped by time and terroir.
- Terroir : The calcareous and marly hillsides of Château-Chalon, bathed in a continental climate, give rise to mineral and taut wines, where Savagnin and Chardonnay express themselves with a chalky elegance.
- Vinification : A respectful approach, combining ageing under veil and in tank, for wines that are both lively and deep, where Jurassian tradition engages with a touch of modernity.
To the eye – A golden robe with green reflections, of a silky and luminous texture, like a veil of light over the Jurassian hillsides.
On the nose – First, aromas of green apple and hawthorn blossom, followed by notes of fresh walnut and citrus zest, before a saline touch that recalls the morning mists of the vineyard.
On the palate – A lively and precise attack, where taut acidity blends with a chalky minerality, while hints of honey and toasted nuts bring a saline, lingering finish.
Serve at 12–14°C in a Burgundy-style white wine glass to reveal its full complexity.
A vintage marked by fine grape maturity, yielding balanced wines that are both fruity and structured, where freshness mingles with a mineral depth.
- Ageing potential : Store for 5 to 8 years in a cool cellar (12–14°C) and away from light, to allow the veil time to develop its complex aromas.
