Pierre Overnoy Arbois Pupillin Vin Jaune 1988, from the Jura’s marl and limestone terroirs, is a Savagnin aged for ten years under a veil of yeast. Notes of walnut, spice, and wild honey lead to a taut, saline palate. Ideal with rich dishes such as chicken with morels or aged Comté.

Appearance: A dense, silky golden color with amber highlights that reveals the years spent aging under a veil of yeast.
On the nose: Aromas of fresh walnut, mild curry, and candied citrus peel intertwine with a saline hint.
On the palate: A rich yet taut texture, driven by lively acidity and chalky minerality, extends into a remarkably long finish.
Serve at 14–16°C in a tulip-shaped white wine glass to appreciate its full complexity.
