Today, Maison Philippe Pacalet works with more than 18 hectares of vines in Burgundy under contracts to purchase the harvest, while carrying out the picking itself on the chosen dates. The vines are, of course, tended with great care and managed under strict specifications. Domaine Philippe Pacalet’s production spans the Côte de Nuits, Côte de Beaune, Chablis, and Beaujolais. Philippe Pacalet, a proponent of whole-cluster fermentation and winemaking without sulfur, worked with his uncle Marcel Lapierre in Beaujolais until the early 1990s, before making wine at Domaine Prieuré Roch. In 2001, he struck out on his own, establishing a wine merchant business based in Beaune.

The History of Domaine Philippe Pacalet

Born in 1962 in La Chapelle-de-Guinchay in Beaujolais, Philippe Pacalet grew up among people who were already talking about living wine, alongside his uncle Marcel Lapierre, a leading figure in the natural wine movement and a member of the famous "Gang of Five" that transformed Beaujolais in the 1980s. Pacalet learned winemaking from Marcel Lapierre at an early age before studying enology. During his studies, he wrote his thesis on native yeasts under the supervision of Jules Chauvet, a scientist who pioneered winemaking without sulfur. This pivotal encounter profoundly shaped his approach to winemaking.

In 1991, Philippe Pacalet became estate manager and winemaker at Domaine Prieuré-Roch in Nuits-Saint-Georges, owned by Henry-Frédéric Roch. For ten years, he applied methods then considered revolutionary in traditional Burgundy: organic vineyard cultivation, whole-cluster fermentation using only native yeasts, and no sulfur at all during fermentation. This experience allowed him to refine his expertise working with exceptional terroirs.

In 2001, drawing on his experience and convictions, Philippe Pacalet established his own négociant business with a radically innovative approach. Rather than buying vineyards in the Côte-d’Or, he entered into medium-term contracts with owners, leasing their vines and buying the harvest. This pioneering model allows him to select parcels planted with old vines on high-quality rootstocks, cultivated according to his strict organic farming requirements. His teams carry out all the vineyard work and set the harvest dates themselves, ensuring complete control over grape quality.

Terroirs and Vineyards of Domaine Philippe Pacalet

Philippe Pacalet works under long-term vineyard leases with partner growers chosen for their respect for the soil and their avoidance of chemicals. Each parcel is meticulously tended, with grapes harvested by hand and with the same rigor a vineyard owner would bring. This unusual arrangement allows the estate to make wine from grapes grown on exceptional terroirs without the constraints of land ownership.

The estate works primarily with traditional Burgundy grape varieties: Pinot Noir for red wines, and Chardonnay and Aligoté for whites. The grapes come from some of the finest appellations in the Côte de Nuits (Gevrey-Chambertin, Chambolle-Musigny, Nuits-Saint-Georges, Vosne-Romanée, Échezeaux), the Côte de Beaune (Pommard, Volnay, Beaune, Meursault, Puligny-Montrachet, Chassagne-Montrachet, Aloxe-Corton), the Chablis area and Beaujolais. Philippe Pacalet has even expanded production to the Northern Rhône Valley with cuvées from Cornas, Condrieu and Côte-Rôtie, demonstrating his passion for Syrah.

The vines are cultivated according to organic farming principles, under extremely strict standards. Working the soil takes priority, with no herbicides or chemical fertilizers. Yields are deliberately limited to encourage concentration and the expression of terroir. This living soil also harbors the various native yeast species that contribute to the expression of terroir through fermentation. Burgundy’s soils, composed mainly of limestone, clay and marl, give the wines their characteristic minerality and tension.

Winemaking at Domaine Philippe Pacalet

The estate’s guiding principle is simple: let nature express itself. Philippe Pacalet follows a philosophy of minimal intervention, seeing his role as guiding the grapes rather than transforming them. His winemaking practices reflect complete consistency between vineyard and cellar.

For the red wines, whole clusters are fermented in tapered wooden vats, with traditional foot punch-downs for three to four weeks. The stems are retained because they play a structural role in the wine’s balance, slightly absorbing alcohol and adding salinity. The grapes are crushed underfoot, and the winemaking is kept as hands-on as possible to foster a connection between the fruit and the people working with it. Once maceration is complete, the pomace is removed with forks for pressing, then the wines are aged for 15 to 18 months in Burgundy barrels that have held one to three previous wines.

For the white wines, winemaking begins with direct pressing of whole clusters, followed by a brief settling period before the juice is transferred to barrels, where alcoholic fermentation begins. This approach preserves the freshness and vibrancy of the aromas.

Fermentation relies exclusively on native yeasts, with none added, to preserve the terroir’s microbial signature. No sulfur is used during fermentation or aging, with the aim of preserving and encouraging the life present in the must. The wines are aged on their lees without racking; the barrels are stirred to resuspend the lees and contribute to the wines’ velvety texture. This technique, known as "reductive aging", encourages aromatic complexity.

The wines receive particular attention through monthly tastings and continuous analytical monitoring. When they are ready, they are racked by gravity, left unfiltered and blended in bulk. A tiny dose of sulfur may be added only at bottling to ensure their stability and aging potential. This purist approach produces living, vibrant wines that remain deeply true to their origins.
