Currently, the Maison Philippe Pacalet works with over 18 hectares of vines in Bourgogne for which it has signed harvest purchase contracts, while also carrying out the harvesting itself on selected dates. Of course, the cultivation of the vines is overseen with great care and subject to strict specifications. The production of Domaine Philippe Pacalet is spread across Côte de Nuits, Côte de Beaune, Chablis, and Beaujolais. Philippe Pacalet, a proponent of wines vinified using whole-bunch fermentation and without sulphur, worked with his uncle Marcel Lapierre in Beaujolais until the early 1990s, before coming to make wine at Prieuré Roch. Since 2001, he has struck out on his own, deciding to create his own négociant business based in Beaune.

History of Domaine Philippe Pacalet

Born in 1962 in La Chapelle-de-Guinchay in Beaujolais, Philippe Pacalet grew up in a circle where the talk was already of living wine, alongside his uncle Marcel Lapierre, an iconic figure of the natural wine movement and member of the famous "Gang of Five" that revolutionised Beaujolais in the 1980s. From a very young age, the winemaker learned to vinify alongside Marcel Lapierre before going on to study oenology. During this training, he devoted his dissertation to indigenous yeasts under the supervision of Jules Chauvet, a pioneering scientist in sulphur-free vinification. This decisive encounter profoundly shaped his working philosophy.

In 1991, Philippe Pacalet became estate manager and winemaker at Domaine Prieuré-Roch in Nuits-Saint-Georges, the property of Henry-Frédéric Roch. For ten years, he applied methods that were then revolutionary for traditional Burgundy: organic viticulture, whole-cluster vinification using exclusively indigenous yeasts, and a complete absence of sulphur during vinification. This experience allowed him to refine his expertise across exceptional terroirs.

In 2001, drawing on his experience and convictions, Philippe Pacalet founded his own négociant structure with a radically innovative approach. Rather than purchasing vines in the Côte-d'Or, he established medium-term contracts with landowners, leasing the vines and purchasing the harvest. This pioneering model allowed him to select with precision plots planted with old vines on quality rootstocks, cultivated according to his strict organic farming requirements. His teams carry out all vineyard work themselves and set their own harvest dates, thus ensuring total control over grape quality.

Terroirs and Vines of Domaine Philippe Pacalet

Philippe Pacalet works on long-term leases with partner winegrowers chosen for their respect of the soil and their avoidance of chemical products. Each plot receives meticulous attention in the vineyard, with manual harvests carried out with the rigour of a proprietor winemaker. This atypical organisation allows the domaine to vinify grapes from exceptional terroirs without the constraints of land ownership.

The domaine works primarily with traditional Burgundian grape varieties: Pinot Noir for the red wines and Chardonnay as well as Aligoté for the white wines. The grapes come from the finest appellations of the Côte de Nuits (Gevrey-Chambertin, Chambolle-Musigny, Nuits-Saint-Georges, Vosne-Romanée, Échezeaux), the Côte de Beaune (Pommard, Volnay, Beaune, Meursault, Puligny-Montrachet, Chassagne-Montrachet, Aloxe-Corton), the Chablis region and Beaujolais. Philippe Pacalet has even extended his production to the northern Rhône Valley with cuvées of Cornas, Condrieu and Côte-Rôtie, demonstrating his passion for Syrah.

The vines are cultivated according to the principles of organic farming, with an extremely strict set of specifications. Soil cultivation is prioritised, with no herbicides or chemical fertilisers whatsoever. Yields are deliberately limited to favour concentration and the expression of the terroir. This living soil also harbours the various species of indigenous yeasts that contribute to the terroir effect through fermentation. The Burgundian soils, composed primarily of limestone, clay and marl, lend the wines their characteristic minerality and tension.

Vinifications of Domaine Philippe Pacalet

The domaine's credo is simple: let life express itself. Philippe Pacalet adopts a philosophy of minimal intervention, considering that his role is to accompany the grape rather than to transform it. His winemaking practices reflect an absolute coherence between the vineyard and the cellar.

For the red wines, vinification is carried out using whole clusters in truncated conical wooden vats with traditional foot-stomping pigeage over 3 to 4 weeks. The stems are retained as they play a structural role in the wine's balance, slightly absorbing alcohol and adding salinity. The berries are foot-trodden and the vinifications are as manual as possible in order to allow a synergy between the fruit and the winemaker. Once maceration is complete, the pomace is removed by pitchfork to be pressed, then the wines are aged in barrels holding 1 to 3 wines for 15 to 18 months.

For the white wines, vinification begins with direct pressing of whole clusters, followed by a short settling before being placed in barrels so that alcoholic fermentation can begin in the cask. This approach preserves the freshness and vibrancy of the aromas.

Fermentations are carried out exclusively with indigenous yeasts, with no added yeasts whatsoever, in order to preserve the microbiological signature of the terroir. No sulphur is used during vinification or ageing, the aim being to preserve and encourage the life present in the must. The wines are aged on their lees without racking, using a barrel-rolling system that keeps the lees in suspension and contributes to the velvety texture of the wines. This technique, known as "reductive ageing", promotes aromatic complexity.

The wines receive special attention during monthly tastings and constant analytical monitoring. When the wines are ready, they are racked by gravity, unfiltered, and blended together. A micro-dose of sulphur may be added solely at bottling to ensure their stability and ageing capacity. This purist approach yields wines that are alive, vibrant, and deeply faithful to their origin.
