Philippe Pacalet estate wines: buy at the best price

Currently, the Philippe Pacalet house works on more than 18 ha of vines in Burgundy for which it has signed harvest purchase contracts, while carrying out the harvesting itself on the chosen dates. Of course, the cultivation of the vines is here followed with great care and subject to strict specifications. The production of the Philippe Pacalet estate is spread across Côte de Nuits, Côte de Beaune, Chablis, and Beaujolais. Philippe Pacalet, who is an advocate of wines vinified as whole-cluster and without sulfur, worked with his uncle Marcel Lapierre in Beaujolais, until the early 1990s, before coming to vinify at the Prieuré Roch estate. Since 2001, he has struck out on his own, deciding to create his own négociant business based in Beaune.

The TOP winemakers of Burgundy

Philippe Pacalet carefully selects his quality supply sources. Aging being a crucial moment to develop the wines, he ensures to give it the greatest possible care. The vinification of red Burgundies is therefore done with whole clusters, in truncated wooden vats, with punching down for 3 to 4 weeks. The pomace is then removed with a fork to be pressed, then the wines are aged in barrels of 1 to 3 wines for 15 to 18 months. The vinification of white Burgundies begins with direct pressing of whole clusters, followed by a short settling to be placed in barrels of 1 to 3 wines, so that alcoholic fermentation starts directly in the barrel. Vinification is therefore carried out without sulfur, with indigenous yeasts and aging on lees without racking. It is to optimize the terroir effect and most faithfully transcribe the specificity of each climat that no SO² is used during vinification and aging. The wines are subject to particular attention through monthly tastings and constant analytical monitoring. When the wines are ready, they are racked by gravity, unfiltered and assembled. They rest for one to two months until bottling. The different climats offered come from the most renowned appellations of the Côte-d'Or. Philippe Pacalet has carefully chosen these vineyard parcels that best correspond to the principle of his work: expressing the terroir of each climat through the wine. When tasting the wines from Domaine Pacalet, the Meursault presents a very floral nose, beautiful fruit maturity and fullness in the mouth. The Gevrey Chambertin is distinguished by a sumptuous perfume, very floral too, and it will be for aging built on its great solidity. The Pommard is a frank success, of controlled power and it will captivate with its mouthfeel and the quality of its fruit. The Chambolle Musigny is more muscular, with very ripe aromas. Deep, but a bit closed, it is better to forget in the cellar the true long-distance runner that is the Grand Cru Echezeaux, which offers superb notes of raspberry and plum, but to wait at least 7/8 years. The Corton Bressandes Grand Cru is very young and compact, blending superb fruit and gentle spices. Endowed with impressive flesh, it will also have to be waited several years.
