Domaine Alain Chabanon was established in the early 1990s following the acquisition of 14 hectares of vines spread across the communes of Montpeyroux, Saint-Saturnin, Jonquières, Lagamas and Saint-André-de-Sangonis. Alain Chabanon's vineyard is located at the foot of the foothills of the Larzac plateau, and the first vintage of this committed winemaker was the 1992 vintage.

Certified organic since 2002, Domaine Alain Chabanon converted fully to biodynamics in 2011. The Domaine Alain Chabanon winery was originally established in Montpeyroux in 1992, but Alain Chabanon has recently opened new, underground facilities in Lagamas. Quality is the watchword at Domaine Chabanon, both in the vineyard (healthy viticulture and low yields) and in the cellar (the top cuvées are aged for up to 3 years). The wines are highly accomplished and have uncommon aging potential (15 years or more). Among the wines, L’Esprit de Fontcaude is the flagship cuvée of Domaine Alain Chabanon, madefrom 45% Syrah, 45% Mourvèdre and 10% Grenache. With 5 weeks of maceration and 36 months of aging, including 24 months in French oak barrels, this wine combines finesse and length. Its deep purple-garnet color accompanies aromas of macerated fruit and coffee. The palate is both full-bodied and structured, with exceptionally fine tannins. It is worth waiting a few years to drink and can be kept for at least 10 years without declining. The cuvée Merle aux alouettes, an IGP Pays d’Oc, is a rare and surprising 100% Merlot with an almost black color. The nose reveals fresh, intense notes of dark fruit, spice and licorice with a subtle hint of vanilla. On the palate, the opening is round, full and powerful, supported by elegant dark-fruit aromas. The tannins are generous but well integrated, and the broad, warm finish suggests good aging potential. The cuvée Les Boissières by Alain Chabanon is made from 80% Grenache, 10% Syrah and 10% Mourvèdre. The nose is fairly intense, dominated by notes of brandied cherries. The palate is full-bodied, with the Grenache showing clearly through its notes of stone fruit and licorice. Domaine Alain Chabanon also offers Saut de Côte, a cuvée of 80% Mourvèdre and 20% Syrah, unusual because Mourvèdre-dominant wines are quite rare in Languedoc. The wine is refined and smooth, silky, complex and exceptionally classy, and was aged in an egg-shaped tank. Finally, among the white Languedoc wines, Alain Chabanon’s Trelans cuvée is a fine white wine for the table, made from Vermentino (60%) and Chenin (40%), with a clear golden color. Its aromas of quince, exotic fruit and vanilla may surprise, but its superb balance pairs aromatic richness with a fresh, lingering palate.
