History of Domaine Lamy-Caillat

Founded in 2008, Domaine Lamy-Caillat was born from a unique opportunity: an octogenarian neighbor offered Sébastien Caillat and Florence Lamy the chance to take over 1.2 hectares of vines in Chassagne-Montrachet. This personal project quickly became a benchmark in the world of Burgundy wines, thanks to the couple's expertise and passion. Sébastien, a civil engineer by training, brings methodical rigor to viticulture, while Florence, from the Lamy-Pillot family, perpetuates a family know-how rooted in Burgundian tradition. Together, they have created a domaine in their image: minimalist, sincere, and devoted to the essential.

In 2011, their first cuvée was born, marking the beginning of a meteoric rise. Their approach, which favors time and patience, contrasts with modern production logic. In parallel, the couple continues to manage Domaine Lamy-Pillot, where Sébastien oversees vinification, but it is in their micro-domaine that they fully express their artisanal vision. Today, Domaine Lamy-Caillat is celebrated by critics, with exceptional ratings from references such as The Wine Advocate and Vinous, confirming its status as a confidential gem of Burgundy.

Terroirs and Vineyards of Domaine Lamy-Caillat

The vineyards of Domaine Lamy-Caillat, exclusively planted with Chardonnay, extend over 1.2 hectares distributed between Chassagne-Montrachet and Saint-Aubin. Cultivated using organic methods (not certified), they benefit from meticulous care, reflecting the couple's philosophy: "small parcels, great care". Each parcel, from massal selections aged 40 to 65 years, is planted at high density (10,000 vines per hectare), promoting exceptional concentration of grapes. Chassagne-Montrachet Premier Cru Les Champs Gains: On 0.113 hectares planted in 1980, this medium-depth terroir produces powerful, round, and opulent wines, taking their name from rich lands conducive to a "second harvest".

Chassagne-Montrachet Premier Cru Les Caillerets: This 0.549-hectare parcel, planted in 1960 and 1982, is characterized by stony marl. It offers rich, harmonious wines with a depth worthy of a grand cru.

Chassagne-Montrachet Premier Cru La Grande Montagne: On 0.144 hectares at 308-318 meters altitude, this well-exposed hillside, planted in 1972, gives tense wines, close to La Romanée, but with a warmer touch.

Chassagne-Montrachet Village Pot Bois: Located at 295-305 meters, this 0.235-hectare parcel, planted in 1963, produces pure and straight wines thanks to its eastern orientation and cooler climate.

Vinifications at Domaine Lamy-Caillat

Vinification at Domaine Lamy-Caillat is a model of craftsmanship and tradition. Faithful to a minimalist approach, the couple favors natural methods to allow the wine to reveal its potential. The grapes, sorted in the vineyard, are pressed using a mechanical Vaslin press, allowing optimal extraction of skins, pulp, and polyphenols. Fermentations, carried out with indigenous yeasts, take place slowly in cold and humid cellars, promoting prolonged malolactic fermentation.

The aging process, lasting a minimum of 24 months, is a signature of the domaine. The wines spend one year in oak barrels (20% new barrels) without bâtonnage, then an additional year in stainless steel tanks to preserve their freshness. This patient approach allows for natural clarification, making filtration unnecessary. Bottling is done by hand, and the addition of sulfur, minimal, takes place three months before bottling. Finally, Sébastien has developed an innovative double waxing system for bottles, reducing oxidation and ensuring long aging potential. Every detail, from premium cork stoppers to artisanal waxing, reflects the domaine's commitment to excellence.
