Founded in the 1850s in Volnay, Domaine Pierrick Bouley, formerly known as R & P Bouley, is rooted in a rich family tradition. Pierrick, representing the sixth generation, grew up among the vines, nurtured by his parents' passion for the Burgundian terroir. After a formative journey including an apprenticeship at the family estate, a degree in oenology in Dijon and an enriching experience in New Zealand at Felton Road, Pierrick joined the estate in 2009. In 2014, he officially took the helm, infusing a modern vision while preserving the family heritage.
Since 2016, Pierrick has left his mark on the estate by launching a négociant activity to offset the vagaries of the climate and by steering viticulture towards more natural practices. His goal? To produce wines that faithfully reflect the purity of the terroir and the authenticity of the vintage. In 2023, the estate celebrated a major milestone with its organic certification, the fruit of a long-standing commitment to sustainable viticulture. Domaine Pierrick Bouley spans 9 hectares divided into 41 plots, primarily in Volnay, but also in Pommard, Monthélie, Beaune and Aloxe-Corton. The majority of the vines, averaging 50 years of age, are old vines (some reaching 90 years), conferring a unique concentration and complexity to the cuvées. The Volnay terroir, which represents one third of the estate, is particularly celebrated with its clay-limestone and stony soils, ideal for Pinot Noir and Chardonnay.
Pierrick adopts a minimalist and environmentally respectful approach. Inspired by biodynamics, he limits interventions in the vines to preserve soil vitality. Tractor passes are reduced to avoid compaction, promoting natural water drainage. The soils are ploughed two to three times per season, and grass is left to grow naturally, reinforcing biodiversity. Pierrick favours the Guyot Poussard pruning method, an ancestral technique that optimises sap circulation, reducing the risk of diseases such as esca. Since 2020, the vines are trained in arched canes, a manual technique that maximises photosynthesis and concentrates the aromas of the grapes. No insecticides, herbicides or anti-rot products are used; only organic contact products against downy mildew and powdery mildew are applied. This meticulous management guarantees healthy grapes, perfect for natural winemaking.
Pierrick Bouley's philosophy rests on a golden rule: producing exceptional grapes to minimise interventions in the cellar. Harvesting is carried out by hand in perforated 13 kg crates, followed by rigorous sorting. The red grapes are fully destemmed but not crushed, while the whites pass through a vibrating sorting table before pressing. Since 2017, no yeast, enzymes, bacteria or SO2 are added during winemaking, allowing a natural fermentation that elevates the aromas of the terroir.
For the red wines, a cold maceration of 3 to 4 days precedes a vatting of 10 to 20 days, with daily pump-overs and a maximum of two punch-downs. The white wines undergo a rapid settling and partial fermentation in barrels. All wines are aged for 12 months in French oak barrels, with 10 to 30% new barrels depending on the appellation, before a light filtration if necessary. A minimal touch of SO2 (20 mg/L free, 50 mg/L total) is added at bottling to ensure stability.
