History of Domaine Mazière

The adventure of Domaine Mazière begins in the 1980s with Jean-Michel Labouygues, a visionary winemaker who crafted exceptional natural wines under the modest label of "Vin de Table". Refusing modern conventions, he left a legacy of sincerity and authenticity. In 2013, Fabrice and Momoko Monnin, former owners of the famous wine bistro "Les Zinzins du Vin" in Besançon, took over the estate. Passionate about natural wines and inspired by figures such as Pierre Overnoy and Jean-Pierre Robinot, they settled in Padern to revive this jewel of Corbières. Their first harvest marked the beginning of a new era, blending tradition with personal touches, while preserving the original spirit of the estate. Today, Domaine Mazière is a reference for enthusiasts wishing to purchase exceptional natural wines.

Terroirs and Vineyards of Domaine Mazière

Domaine Mazière extends over 9 hectares of vines, nestled on the wild slopes of Mont Tauch, in the Verdouble valley. These plots, surrounded by garrigue, benefit from terroir of exceptional geological richness, comparable to that of Jura. The vines, some of which exceed 100 years, are composed of traditional grape varieties such as Macabeu, Carignan, Syrah and Grenache Noir, often interplanted with rare varieties. Three distinct terroirs shape the cuvées:  

Le Clot d'Estan: a limestone terroir, mineral and saline, where Macabeu and Carignan dominate.  

La Bajungle: a sunny hillside, producing Grenache Noir of intense and fruity maturity.  

Les Gleizes: a high-altitude terroir, fresh and floral, ideal for Syrah. Cultural practices follow organic principles, with Ecocert certification in progress. The soils are maintained by harrowing, mowing and sheep grazing, while vine care favors manual methods and natural treatments (sulfur, nettle and horsetail teas). Each parcel is protected from wild boar by robust fencing, ensuring the preservation of this unique viticultural heritage.

Vinifications at Domaine Mazière

At Domaine Mazière, vinification is a minimalist art, faithful to the philosophy of natural wines. The grapes, harvested by hand between mid-September and the end of October, are sorted directly in the vineyard to keep only the best maturities. In the ancestral cellar, devoid of electricity, everything is done by gravity: manual crushing, wooden destemming, ratchet pressing. Fermentations rely on indigenous yeasts, without additives or modern interventions. The wines are aged for two to three years, sometimes longer, in old Burgundian, Bordeaux or demi-muid barrels. Some barrels are not topped up, promoting subtle oxidative notes that reveal the minerality and salinity of the terroir. Each cuvée is bottled without filtration or sulfites, directly from the barrel, to preserve the authenticity of the fruit and the expression of the terroir.

The Cuvées of Domaine Mazière

The wines of Domaine Mazière, rare and limited to 200-300 bottles per barrel, capture the soul of Corbières. Each cuvée is sealed with wax for better preservation and identified by a batch number, ideal for collectors and retailers. Here are the main cuvées:  

Mazière (Macabeu)

Sealed with white wax, these cuvées come from old Macabeu vines, harvested in several passes for optimal maturity. After maceration, the wine is aged approximately two years in Burgundian barrels, sometimes under flor or in solera, revealing saline minerality and lively acidity. This rich white offers notes of yellow fruits, citrus and beeswax, perfect for accompanying seafood or Mediterranean dishes.  

Mazière (Syrah)

Sealed with blue wax, these cuvées come from Syrah grown on the fresh and airy terroir of Les Gleizes, complemented by Grenache and interplanted varieties. Whole cluster maceration with punching down produces a wine with fine tannins, with floral aromas and stone fruits. Aged in old Burgundian barrels, this balanced red seduces with its elegance and freshness, ideal for grilled meats or spicy dishes.  

Mazière (Grenache)

Sealed with black wax, these cuvées are made from Grenache Noir, sometimes interplanted with Grenache Gris and Blanc, on the sunny terroir of La Bajungle. A long maceration and aging in barrels or 54-liter demijohns give this wine a velvety texture and rancio notes, with a touch of residual sweetness. This powerful red, with aromas of rose and candied fruits, is perfect for rich dishes or moments of contemplative tasting.  

Mazière (Carignan) (C)

Made from century-old Carignan interplanted with other varieties (Grenache, Macabeu, Aramon, etc.), this cuvée ferments spontaneously in neutral wood and is aged for over a year in old Burgundian barrels. Unfiltered, with no added sulfites, it offers a robust structure with earthy and mineral notes, typical of Clot d'Estan. An exceptional wine for lovers of powerful and authentic reds.  

Mazière (Syrah) (S16)

This specific Syrah cuvée, from a unique parcel, is vinified with indigenous yeasts and aged in Burgundian barrels. Without filtration or sulfites, it reveals intense floral aromas and a silky texture, with marked minerality. A rarity to discover for lovers of elegant Syrah.
