Bollinger Special Cuvée, a Brut champagne from Aÿ, blends Pinot Noir, Chardonnay, and Pinot Meunier. Its reserve wines bring aromas of ripe fruit, nuts, and brioche. Fine bubbles and a saline finish balance its roundness. Perfect as an aperitif or with roast chicken, through 2035.
A family-owned house rooted in Aÿ since 1829, Bollinger embodies the exacting standards of great Champagnes, shaped by exceptional terroir and an uncompromising tradition.
- Terroir : More than 85% of the vineyards are classified as Grands and Premiers Crus, on the chalky soils of the Montagne de Reims and Côte des Blancs, giving the wines distinctive minerality and elegant tension.
- Winemaking : Extended cellar aging and a blend of reserve wines aged in magnums—a distinctive signature that gives the cuvées rare depth and remarkable consistency.
Tasting notes for Bollinger Special Cuvée
Appearance – A brilliant golden-yellow color with silver highlights, crystal clarity, and a silky texture, like a veil of silk stretched across the light.
On the nose – Fresh raspberry and orange blossom aromas come to the fore, followed by deeper notes of toasted brioche and fresh walnuts, and a saline touch reminiscent of the coastal air over Champagne’s hillsides.
On the palate – A round, generous opening with remarkably fine bubbles brings together lively grapefruit zest, the softness of toasted almond, and chalky minerality, leading to a long, velvety finish with taut elegance.
Serve at 8–10 °C in a Champagne flute to preserve the purity of its aromas and the precision of its bubbles.
