Marc Soyard Bourgogne 2023 red, from the limestone hillsides of Dijon. Biodynamic Pinot Noir with notes of red fruits, spices and chalky minerality. Aged in barrels, silky texture and saline finish. Perfect for 3–5 years of cellaring, with meats or aged cheeses.
Nestled on the hillsides of Plombières-lès-Dijon, this family estate embodies the alliance between Burgundian tradition and modern viticulture.
- Terroir : The chalky and limestone soils of the Coteaux de Dijon, bathed in a continental climate, lend the wines a distinctive minerality and a natural elegance.
- Vinification : A biodynamic approach, manual harvesting and patient ageing in barrels reveal the purity of Pinot Noir, without artifice.
In the glass: a deep ruby robe with garnet reflections, of a silky and luminous texture.
On the nose: aromas of morello cherry, wild blackberry and violet, lifted by a touch of liquorice and a subtle chalky salinity.
On the palate: a lively and precise attack, carried by silky tannins and a taut minerality, leading to a long, saline finish.
Serve between 14 and 16°C, in a Burgundy glass to bring out its full complexity.
A vintage marked by balanced maturity, where freshness and concentration come together in perfect harmony.
- Ageing potential : Best kept for 5 to 8 years in a cool, humid cellar, away from light.
