The Marthe Henry Santenay Le Biévaux 2022, born on the limestone hillsides of Santenay, is an organic Chardonnay aged 18 months in barrels. Nose of yellow fruits, citrus and flint. Precise, taut and chalky palate, with a toasted touch. Perfect with noble fish or aged cheese, it can be kept for 5 to 8 years.
An estate where Burgundian heritage meets a contemporary approach to Chardonnay – rooted in the hillsides of Santenay, between precision and respect for the terroir.
- Terroir: The clay-limestone soils of the Le Biévaux climat, facing due east, impart a chalky minerality and a characteristic tension to the wines.
- Winemaking: Manual harvesting, 18 months aging in oak barrels without additives, for a pure expression and a silky texture.
To the eye: A golden robe with green highlights, of a crystalline clarity and a brilliance that heralds its tension.
On the nose: Aromas of fresh mango and lime zest intertwine with notes of acacia blossom, before a hint of flint underlines the minerality of the terroir.
On the palate: The attack is lively and precise, carried by a taut acidity that guides a silky texture, while toasted nuances and a chalky salinity extend the finish into a long persistence.
Serve between 12 and 14°C in a Burgundy glass to reveal all its complexity.
A vintage marked by generous ripeness and preserved freshness, offering an ideal balance between fruit and minerality.
- Aging potential: To be kept 8 to 12 years in a cool cellar (12-14°C) and away from light, to allow its nuances to develop over time.
