Sylvain Pataille Bourgogne 2023 rouge, grown on the limestone slopes of Marsannay-la-Côte. This biodynamic Pinot Noir, aged in barrels, reveals notes of red fruits and spices. Lively and elegant on the palate, with a mineral touch, it pairs with poultry and cheeses until 2028.
Nestled at the heart of Marsannay-la-Côte, this family estate embodies the alliance between Burgundian tradition and biodynamic boldness.
- Terroir : The clay-limestone soils of the Côte de Nuits, bathed in a continental climate, sculpt Pinot Noirs of chalky minerality and vibrant elegance.
- Winemaking : A natural approach – whole clusters, gentle macerations and aging in used barrels – to reveal the purity of the fruit and the tension of the terroir.
To the eye: a ruby robe with garnet highlights, of a silky and luminous texture.
On the nose: aromas of morello cherry and fresh redcurrant intertwine with notes of blood orange zest, discreet cinnamon and a saline touch reminiscent of damp undergrowth.
On the palate: a lively and precise attack, carried by a taut acidity and a chalky minerality, leading to a long and elegant finish where gentle spices and melted tannins intermingle.
Serve between 14 and 16°C in a Burgundy glass to bring out its full complexity.
A vintage marked by balanced ripeness, where freshness and concentration respond to each other in harmony.
