Sylvain Pataille Marsannay Le Chapitre 2023: Pinot Noir from Marsannay, on calcareous soils. Vinified without sulphur, aged 18 months in barrels, it reveals cherry, rose and minerality. Silky palate, vibrant acidity, fine tannins. Perfect with meat or cheese after decanting, until 2035.
Nestled at the edge of the Côte de Nuits, this family estate embodies the balance between Burgundian tradition and viticultural boldness.
- Terroir : Biodynamic vines on the calcareous and marly hillsides of Marsannay, east-facing, where the chalky soil sculpts the elegance of the wines.
- Vinification : Natural approach – whole clusters, spontaneous fermentations and ageing in old barrels to preserve the purity of the fruit and mineral tension.
- Eye : Deep ruby robe with garnet highlights, boasting a silky, luminous texture.
- Nose : Aromas of ripe red cherry, rose petals and hibiscus, followed by a hint of gentle spices and a graphite minerality evoking the calcareous soils of the climat.
- Palate : A precise, taut attack, carried by vibrant acidity and powdery tannins; the texture stretches into a saline, chalky finish, revealing the freshness and depth of the terroir.
Serve at 16°C in a Burgundy glass to release its nuances.
A vintage marked by balanced maturity, where freshness and concentration respond to one another in harmony.
