History of the Sylvain Pataille Estate

The history of the Sylvain Pataille Estate is the captivating tale of a passion that has evolved since the man's youth. A trained consulting oenologist, Sylvain Pataille began his winemaking journey in 1999 by taking charge of one hectare of leased vineyards. His ambition: to create Burgundy wines that reveal elegance and authenticity, specifically in the Marsannay appellation.

Over the years, the estate has experienced remarkable expansion, growing from 2 to 4 hectares between 2000 and 2011, until Sylvain Pataille's definitive installation in 2011. The cultivated area reached 10 hectares in 2002, and the estate now oversees a 17-hectare vineyard since 2008, with certification in organic agriculture by Ecocert.

Terroir and Characteristics of Sylvain Pataille's Vineyards

The vineyards of the Sylvain Pataille Estate, spread over 17 hectares, embody a deep respect for the soils and grapes. The Marsannay terroir, with its climate, clay-limestone soil, and ideal exposure, provides the perfect setting to cultivate grapes of exceptional quality. The commitment to organic agriculture since 2008 attests to the estate's desire to preserve the natural balance and richness of the terroir.

Manual harvesting and gentle pressing are favored practices, highlighting the intention to preserve the intrinsic quality of the grapes. Barrel aging, with a proportion of new barrels limited to 30%, extends for 15 to 18 months, allowing the unique characteristics of the terroir to fully express themselves in the wines.

Vinification at the Sylvain Pataille Estate

Vinification at the Sylvain Pataille Estate is an ode to simplicity and purity. Traditional methods, with minimal intervention, are preferred. Gentle pressing, natural fermentations, and a minimal approach to additives characterize the process, aiming to preserve the very essence of the grape.

Profiles of Wines from the Sylvain Pataille Estate

The cuvées from the Sylvain Pataille Estate, whether white, red, or rosé, reflect exceptional delicacy: they stand out for their freshness, finesse, and magnificent elegance!

The Clos du Roi: The Marsannay Clos du Roy Rouge 2021 is among the exceptional terroirs of Marsannay, characterized by its fine limestone, often indicative of great wines. Sylvain Pataille orchestrated this plot with precision in the 2021 vintage, giving rise to a harmonious, elegant wine with remarkable minerality. A true nectar for enthusiasts of exceptional wines. 100% Pinot Noir from the most prestigious plot. To be enjoyed now and until 2030. The name "Clos du Roy" originates from the unique possession of these plots by the King of France Louis XI in 1477.

The robe is a beautiful garnet. On the nose, the bouquet immediately captivates with enchanting notes of peony and violet, accompanied by aromas of red fruits, cherry, and raspberry, all sprinkled with sweet spices. In the mouth, a silky texture envelops perfectly ripe tannins and a generous body: balanced and of great complexity, this wine lingers long for our greatest pleasure.

Le Chapitre: Initially classified under the Bourgogne appellation, this red wine from Clos du Chapitre was reclassified under the Marsannay appellation from 2019. The Pinot Noir that composes it comes from a small parcel housing old vines, located north of the viticultural area. These vines are meticulously maintained, cultivated according to certified organic principles and using biodynamic methods. They draw their essential nutrients from lean, stony soils composed of limestone, marl, and clay. Sylvain Pataille, a trained oenologist, dedicates himself to meticulous, minimally interventionist vinification, followed by aging in barrels for a year and a half. The proportion of new wood varies around 35%. We recommend letting this wine age in the cellar for at least five years before tasting it. At that time, it will reveal a seductive complexity of aromas. Both ample and delicate, it will unveil notes of sweet spices, red fruits, cherry eau-de-vie, and flowers.
