The Bourgogne 2023 by Sylvain Pataille, a biodynamic Pinot Noir on clay-limestone soils, marries cherry, blackcurrant and herbaceous notes after 15 months in barrels. Velvety texture, smooth tannins and mineral freshness. Perfect until 2028 with roast chicken or goat's cheese.
Nestled in Marsannay-la-Côte, this family estate embodies the discreet elegance of the Côte de Nuits.
- Terroir : Steep clay-limestone soils, historic plots such as Champforey or En Bessy, where Pinot Noir flourishes under the Burgundian climate.
- Vinification : Natural approach – hand harvesting, gentle maceration, ageing in barrels for a pure and vibrant expression of the grape variety.
To the eye: Clear ruby robe with silky reflections, of crystalline transparency.
On the nose: Freshness of morello cherry and blackcurrant, followed by hints of wild blackberry, a herbaceous touch of undergrowth and a saline note that recalls the chalky soils.
On the palate: Velvety texture, lively acidity and taut minerality, fine tannins wrapped in a slightly liquorice finish, carried by a saline and precise length.
Serve at 14-16°C in a Burgundy glass to release its aromas.
A vintage marked by balanced maturity, where freshness and concentration blend in harmony.
- Ageing potential : To be enjoyed until 2028, in cool and stable cellar conditions (12-14°C, moderate hygrometry).
