Located in Volnay, at the heart of the Côte de Beaune in Burgundy, Domaine François Morente is one of the most confidential and fascinating micro-estates in the region. Founded in 2014 by François Morente, a physics and chemistry teacher and musician turned winegrower by passion, this tiny estate is based on a third of a hectare of vines planted at very high density (one plant every 50 cm) in the Hautes-Côtes de Beaune, complemented by a discreet négociant activity. Vinified naturally, without added sulphites, worked with a horse and entirely by hand, the wines of François Morente have, over just a few vintages, become a rare and sought-after reference. A production limited to around ten barrels per year, the signature of a sincere, upright, elegant and deeply authentic Burgundy.

History of Domaine François Morente

The history of Domaine François Morente is one of a late vocation and a contagious passion. A physics and chemistry teacher at the Lycée Dumézil in Vernon, and also an active musician in a band, François Morente has long been an enlightened wine enthusiast, open to all regions but deeply attached to Burgundy. His personal quest led him in 2014 to acquire one third of a hectare of Hautes-Côtes de Beaune, in close proximity to Pommard, which he initially purchased with the idea of putting it into sharecropping.

The sharecropping project did not come to fruition, and François Morente then decided, out of challenge and passion, to become a winemaker himself. He learned everything on the job, drawing on the spirit of mutual assistance that prevails among winegrowers in the Côte de Beaune. His parcel was entirely replanted with Pinot Noir, but at very high density, with one vine every 50 centimetres, amounting to approximately 6,000 plants — a unique configuration on the Hautes-Côtes de Beaune appellation where he is, to our knowledge, the only one to practise this extreme density. He progressively expanded his range through a measured négociant activity, allowing him to produce a Bourgogne Blanc sourced from the Mâconnais and a Volnay Village. The estate, now based in Volnay, offers a confidential production of approximately ten barrels per year.

Terroirs and Vineyards of Domaine François Morente

The estate vineyard of Domaine François Morente amounts to 0.33 hectares of Hautes-Côtes de Beaune, located in close proximity to Pommard, on the Côte de Beaune. The soil, predominantly clay-limestone typical of Burgundian hillsides, offers Pinot Noir an ideal setting to express purity and freshness. The absolute singularity of the parcel lies in its very high planting density — one vine every 50 centimetres, amounting to approximately 6,000 plants over this small surface area. This extreme density, exceptional for the Hautes-Côtes de Beaune appellation, forces the vine to concentrate its energy on naturally low yields and to root its stocks deep into the ground, a guarantee of concentrated and expressive grapes.

Vine management is exemplary and entirely manual: horse-drawn soil work, reasoned pruning, drastic budding removal, careful trellising, with no use of synthetic chemical products. François Morente tends his parcel like a garden, visiting every fortnight and paying attention to the smallest detail. The Bourgogne Blanc, for its part, is sourced from grapes purchased in the south of Burgundy, more precisely in the Mâconnais, from winegrowers who share the same values of respect for the terroir.

Winemaking at Domaine François Morente

In the cellar, François Morente's approach is profoundly natural and rigorous. The harvests are entirely manual, followed by strict sorting of the berries at the winery. Vinification is carried out in part with whole clusters, in a proportion that varies according to the vintage and the ripeness of the grapes. Fermentations proceed with indigenous yeasts, without the addition of oenological inputs, in a fully committed natural approach.

Ageing follows a well-established protocol: twelve months in oak barrels, followed by four months in tank, without added sulphites, in order to preserve the purity of the fruit and the aromatic vibrancy of the wine. This method, combined with the very small scale of production (approximately ten barrels per year), allows François Morente to lavish extreme care on each cuvée. The result is expressed in wines of remarkable straightforwardness, considered one of the finest examples of 100% Burgundian natural Pinot Noir: pure, flattering and fresh juice, elegant, with a crunchy and juicy finish, faithful to the winemaker's sincere and precise signature.

The Cuvées of Domaine François Morente

Bourgogne Blanc: a Chardonnay sourced from selected grapes in the south of Burgundy, more precisely in the Mâconnais. Vinified in the house style, without added inputs, this white wine offers an expressive nose of white fruits, flowers and citrus, a fresh, balanced, straight and precise palate. A gourmand cuvée that perfectly illustrates the winemaker's natural sensibility.

Bourgogne Blanc Élevage en Fût (pink wax): a rarer and more confidential version of the Bourgogne Blanc, recognisable by its pink wax seal. Sourced from the same supply but benefiting from extended barrel ageing, this cuvée stands out for its very fine length, its more pronounced salinity and its heightened aromatic complexity. A deeper and more structured expression of the house Chardonnay.

Hautes-Côtes de Beaune Rouge: the estate's absolute signature, this 100% Pinot Noir is sourced from the third of a hectare planted at very high density in close proximity to Pommard. Vinification with partial whole-cluster harvesting, ageing of twelve months in barrels and four months in tank, without added sulphites. The wine distinguishes itself by its exemplary straightforwardness, its purity of fruit, its crunchy freshness and its juicy finish. A natural Pinot Noir considered a benchmark for the region — elegant, precise and sincere.

Volnay Village: a négociant cuvée sourced from purchased grapes from the prestigious Volnay appellation in the Côte de Beaune. Vinified with the same exacting standards as the estate's own wines, this cuvée perfectly embodies the finesse, elegance and delicacy characteristic of the great Pinot Noirs of Volnay, in an airy, refined style built for a lovely period of cellaring.
