William Fèvre estate wines: buy at the best price

This iconic estate was acquired some twenty years ago by Bouchard Père et Fils and now belongs to the Henriot group. The William Fèvre estate is located in the town of Chablis, not far from estates such as La Chablisienne, Vincent Dauvissat, Jean Paul Droin, Laroche, Raveneau, Moreau Naudet and Simon Billaud. The William Fèvre estate covers the Chablis Grand Cru appellations (Bougros côte de bouguerot, Bougros, Les Clos, les Preuses, Valmur, Vaudésir), Chablis 1ers crus (Beauroy, Fourchaume, Les Lys, Mont de milieu, Montmains, Montée de Tonnerre, Vaulorent, Vaillons), Chablis and Petit Chablis. The vineyard covers an area of 78 hectares planted exclusively with Chardonnay. The vines, cultivated using sustainable farming methods, grow on Kimmeridgian soil (where sediments composed of large quantities of small fossilised oysters, Ostrea virgula, were deposited). The William Fèvre estate was awarded the High Environmental Value certification in January 2015. Two thirds of the estate's vines have been cultivated organically since 2006 and with a biodynamic approach since 2010.

The wines of Domaine William Fèvre are rather straight and austere in style in their youth, so patience is required, or one should favour warm vintages. The Chablis Grand Crus Bougros Côte de Bouguerots, Les Clos, Les Preuses, Valmur and Vaudésir are the finest white Burgundy wines from Domaine William Fèvre. They have an ageing potential of 10 to 20 years. The Chablis Grand Cru Clos 2014 has a contained power, great breadth and precision of flavours, harmonious, with fine menthol and citrus touches on the finish (17.5/20 RVF and 19.5/20 B&D). The Chablis Grand Cru Preuses 2014 is very saline, straight, still reserved on the aromatic front, with a smooth and creamy texture on the palate, tension, a great wine in the making that demands patience (17/20 RVF and 18/20 B&D). The Chablis Grand Cru Bougros Côte de Bouguerots 2014 has a superb saline and mouthwatering expression, very straight, with flesh and power, intense persistence (18/20 RVF and B&D). The Chablis Grand Cru Valmur 2013 is fruity, pure and chiselled; it starts discreetly but gains energy as the tasting progresses. Best enjoyed in a few years' time (17.5/20 B&D). The Chablis Grand Cru Vaudésir 2014 has astonishing power and floral intensity, a tight palate. The peppery finish is very pronounced, with great minerality owing to the terroir (17.5/20 B&D). The Chablis 1er Cru wines from William Fèvre will age for 5 to 10 years or more. The Chablis 1er Cru Montmains William Fèvre 2014 is elegant and very fresh, with menthol notes, a refined palate with a good dense, straight return and a tight finish (15.5/20 RVF and 16/20 B&D). The Chablis 1er Cru Montée de Tonnerre 2014 has an intense, deep fragrance of rare power. The texture combines silkiness with elegant minerality, less cutting than other vintages, more delicate and sensual yet equally successful, with a fine future ahead (17.5/20 B&D). The 1er Cru Fourchaume 2014 has aromas of dried straw, with an elegant and silky texture (16.5/20 RVF and B&D). The Vaillons 2014 has a lovely ripe and fresh apricot fruitiness, a fine salinity that supports the length, a tight and tonic persistence, rated 16/20 (RVF and B&D). The Chablis 1er Cru Vaulorent 2014 has a distinguished, elegant nose with a discreet hint of white pepper, a broad-shouldered wine built like a Fine Wine, saline, straight and persistent, combining creaminess with tension (18/20 B&D). The Chablis and Petit Chablis from William Fèvre should be kept for 3 to 6 years. The Chablis 2014 has punch and beautiful vitality, straight with substance and vivacity.
