This iconic estate was acquired about twenty years ago by Bouchard Père et Fils and now belongs to the Henriot group. Domaine William Fèvre is located in the town of Chablis, not far from producers such as La Chablisienne, Vincent Dauvissat, Jean Paul Droin, Laroche, Raveneau, Moreau Naudet and Simon Billaud. Domaine William Fèvre covers the Chablis Grand Cru appellations (Bougros côte de bouguerot, Bougros, Les Clos, les Preuses, Valmur, Vaudésir), Chablis Premiers Crus (Beauroy, Fourchaume, Les Lys, Mont de milieu, Montmains, Montée de Tonnerre, Vaulorent, Vaillons), Chablis and Petit Chablis. The vineyard spans 78 hectares planted exclusively with Chardonnay. The vines are cultivated using sustainable farming practices on Kimmeridgian soil, where sediments containing large quantities of small fossil oysters, Ostrea virgula, were deposited. Domaine William Fèvre obtained High Environmental Value certification in January 2015 . Two-thirds of the estate’s vines have been farmed organically since 2006 and with a biodynamic approach since 2010.

The wines of Domaine William Fèvre tend to be taut and austere in their youth, so patience is needed, or you may prefer warmer vintages. The Chablis Grands Crus Bougros Côte de Bouguerots, Les Clos, Les Preuses, Valmur, and Vaudésir are Domaine William Fèvre’s greatest white Burgundy wines . They can age for 10 to 20 years. The Chablis Grand Cru Les Clos 2014 has restrained power, impressive breadth, and precise flavors; it is harmonious, with delicate hints of menthol and citrus on the finish (17.5/20 RVF and 19.5/20 B&D). The Chablis Grand Cru Les Preuses 2014 is intensely saline and taut, still restrained aromatically, with a creamy mouthfeel, tension, and the makings of a fine wine that calls for patience (17/20 RVF and 18/20 B&D). The Chablis Grand Cru Bougros Côte de Bouguerots 2014 has a superb saline, mouthwatering character; it is very taut, with substance, power, and an intensely persistent finish (18/20 RVF and B&D). The Chablis Grand Cru Valmur 2013 is fruity, pure, and finely etched. It starts out discreetly but gains energy as the tasting progresses. It will be better in a few years (17.5/20 B&D). The Chablis Grand Cru Vaudésir 2014 has surprising power and floral intensity, with a tightly structured palate. The pronounced peppery finish shows abundant terroir-driven minerality (17.5/20 B&D). The William Fèvre Chablis Premiers Crus will age for 5 to 10 years, or even longer. The William Fèvre Chablis 1er Cru Montmains 2014 is elegant and very fresh, with menthol notes, a clean palate, a satisfyingly dense return, and a taut finish (15.5/20 RVF and 16/20 B&D). The Chablis 1er Cru Montée de Tonnerre 2014 has an intense, deep aroma of rare power. Its texture combines silkiness with elegant minerality; less incisive than other vintages, it is more delicate and sensual but just as successful, with a promising future (17.5/20 B&D). The 1er Cru Fourchaume 2014 has aromas of dried straw and an elegant, silky texture (16.5/20 RVF and B&D). The Vaillons 2014 has appealing ripe yet fresh apricot fruit and a fine salinity that sustains its length, with a taut, lively finish; it scored 16/20 (RVF and B&D). The Chablis 1er Cru Vaulorent 2014 has a distinguished, elegant nose with a subtle note of white pepper. A broad-shouldered wine built like a grand cru, it is saline, taut, and persistent, combining creaminess with tension (18/20 B&D). The William Fèvre Chablis and Petit Chablis will keep for 3 to 6 years. The Chablis 2014 has punch and lovely energy; it is taut, with substance and vibrancy.
