The Ramonet estate is established in Chassagne-Montrachet, at the heart of the Côte de Beaune in Burgundy. Its vineyard spans 17 hectares, covering the villages of Chassagne-Montrachet, Saint-Aubin, Bouzeron and Pernand-Vergelesses, with no fewer than 24 different appellations. This family transmission over three generations is the cornerstone of the estate's philosophy, combining respect for traditions and qualitative excellence at every vintage.

The Ramonet estate produces 70% white wines and 30% red wines from Burgundy. The whites, made primarily from Chardonnay, are the estate's signature and concentrate the bulk of its worldwide reputation. The reds, crafted from Pinot Noir, remain less well-known but are no less high in quality: the reds are refined and silky, and represent excellent value for money.

The Ramonet estate is one of the best-endowed owners of premier crus in Chassagne-Montrachet. It owns 7 Chassagne-Montrachet Premiers Crus, in addition to its plots in grand crus such as Montrachet, Bâtard-Montrachet and Chevalier-Montrachet, as well as vines in Puligny-Montrachet and Saint-Aubin. This exceptional parcel wealth allows the estate to offer a unique palette of terroirs, with each cuvée precisely expressing the nuances of its birthplace on the Côte de Beaune. 

Domaine Ramonet is among the rare owners to hold plots across several grands crus of the Côte de Beaune. Its vineyards include exceptional terroirs: Montrachet (0.2 ha), Bâtard-Montrachet (0.6 ha), Bienvenues-Bâtard-Montrachet (0.4 ha) and Chevalier-Montrachet (0.1 ha). These cuvées, crafted from old Chardonnay vines, are unanimously regarded as absolute references for lovers of great white Burgundy wines.

Winemaking at Domaine Ramonet combines tradition and precision. For white wines made from Chardonnay, fermentation begins in stainless steel tanks before continuing in oak barrels, where the wines are aged on lees for 12 to 18 months. The proportion of new wood varies according to the appellation's ranking: more modest for village wines, it increases progressively for premier and grand crus, reflecting the hierarchy of terroirs and the pursuit of a perfect balance between mineral freshness and aromatic depth.

Service is a decisive step in fully appreciating the wines of Domaine Ramonet. The domaine's white wines are ideally served at around 11°C, in beautiful white Burgundy glasses. In their youth, an energetic decanting of about thirty minutes will allow them to develop their full aromatic potential. For older premier crus, the serving temperature can be raised slightly, to around 12-13°C, in order to let the complexity and depth accumulated over the years of ageing express themselves.
