History of Domaine Joseph Voillot

It all began in the 1840s, when the first Joseph Voillot settled in Volnay. He grew a variety of crops, tended vines as a sharecropper, and owned a few rows of his own. His son Jean-Baptiste expanded the family holdings with several plots, including Clos Micault, acquired in 1870. The third generation, represented by Marius, added key parcels between 1929 and 1933: Volnay Fremiets, Pommard Rugiens, and Meursault Les Cras, alongside vines acquired through his marriage to Céline Rossignol. His son, the second Joseph Voillot, continued acquiring land and, beginning in 1957, started estate-bottling a third of the production.

With three daughters, none of whom wanted to take over the estate, Joseph welcomed his son-in-law Jean-Pierre Charlot into the business. Jean-Pierre also came from a wine background: his father managed relations with growers at Bouchard Père et Fils. Trained in enology and formerly a wine broker in Beaune, Jean-Pierre joined the estate in the early 1980s and took charge in 1994 when Joseph retired. A longtime teacher at the Lycée viticole de Beaune, where he trained several of Burgundy's rising stars, he established a fine, elegant style that ran counter to the fashion for concentrated wines. Joseph Voillot died in July 2014 in the house where he had grown up, opposite the church in Volnay. Today, Jean-Pierre's nephew Étienne Chaix has taken over without changing that philosophy.

Terroirs and Vines of Domaine Joseph Voillot

The vineyard spans four prestigious Côte de Beaune villages: Volnay, Pommard, Beaune, and Meursault. Its eight hectares are divided into thirty-five parcels, a pattern typical of Burgundy's inherited holdings, and planted predominantly with Pinot Noir. The soils are mainly clay-limestone, but vary considerably with their position on the slope. Bathonian and Oxfordian limestone, white marl, and Argovian marl account for the marked differences between the cuvées.

Volnay remains the spiritual heart of the estate, home to its largest premier cru holding, Les Champans, and nearly century-old vines in Les Champans and Les Fremiets, some planted as early as the 1930s. Volnay Vieilles Vignes comes from the lower slopes, on deep gravelly and silty soils containing fragments of Bathonian limestone. In Pommard, the four premier crus range from the foot of the slope for Clos Micault and Les Epenots to midslope for Les Pézerolles and Les Rugiens. Soils there are often shallow, naturally limiting yields. The vines are worked two or three times a year, with each intervention tailored to the parcel. The estate has held High Environmental Value certification since 2017, and pesticides and herbicides have been banned.

Winemaking at Domaine Joseph Voillot

Jean-Pierre Charlot sums up his approach with a phrase that suits him: practical farming sense. Nothing showy, but everything is executed with precision. The grapes are harvested by hand and sorted rigorously, a step that becomes especially important in difficult vintages. They are fully destemmed, then vinified traditionally, parcel by parcel, using native yeasts, conventional maceration, and measured punch-downs, never seeking to extract more than the grapes naturally offer.

The wines are then aged for sixteen to eighteen months in oak barrels, with a deliberately modest proportion of new oak—generally between ten and twenty-five percent depending on the cuvée's standing—and none for the regional appellations. The wines are not fined and undergo only very light filtration, if any. The result is lightly colored Burgundies, sometimes considered understated when tasted as futures, but whose aging reveals the character of the vintage and terroir with remarkable precision. Their finely textured palate and the seamless integration of tannin into the bouquet are hallmarks of the great stylists of the Côte de Beaune.

The Cuvées of Domaine Joseph Voillot

Bourgogne Rouge Vieilles Vignes: Pinot Noir from parcels extending the great terroirs of Volnay and Pommard, vinified without new oak. Crisp red fruit, delicate floral notes, and fine tannins make for an honest, easy-drinking entry to the range, best enjoyed within four to six years.

Volnay Vieilles Vignes: a blend of five lower-slope terroirs—Poisots, Gigottes, Serpents, Pasquiers, and Lurets, the last near Meursault—with vines planted in 1930, 1946, and 1973. Beautifully balanced, with delicate floral notes, bramble, cherry, and tart raspberry, followed by spice on the finish. An exemplary village-level Volnay to enjoy over four to five years.

Pommard Vieilles Vignes: the counterpart to the preceding wine from the neighboring village, with a meaty nose backed by raspberry and ink. The palate is richer and warmer than the Volnay, with slightly rounder tannins and a highly spiced finish. Warm and inviting.

Volnay 1er Cru Les Caillerets: just fourteen ares in one of the appellation's finest climats, on shallow, stony Oxfordian limestone soil. The resulting wine has an airy finesse, crystalline red fruit, and incisive minerality, with remarkable length. A highly sought-after rarity.

Volnay 1er Cru Les Champans: the estate's largest premier cru holding at nearly 1.7 hectares, planted with vines approaching a century old. This is the quintessential estate wine: aromas of violet and red fruit, a silky texture, exceptionally fine tannins, and elegant length. A benchmark Volnay built to age.

Volnay 1er Cru Les Fremiets: a climat on the Pommard boundary, planted in the 1930s by the third generation. It combines Volnay's elegance with a slightly firmer structure, offering black fruit, spice, and a firm mineral backbone that calls for a few years in the cellar.

Volnay 1er Cru Taillepieds, Sous la Chapelle, and Les Brouillards: depending on the vintage and bottling, these climats round out the estate's Volnay range. Taillepieds brings tension and a linear profile from its lean upper-slope soil; Sous la Chapelle offers immediate floral elegance; Les Brouillards has a more generous texture. Small-production cuvées worth seeking out in older vintages.

Pommard 1er Cru Clos Micault: a parcel acquired in 1870 and replanted in 1958 at the foot of the slope, on shallow Jurassic limestone and white marl soils. The wine is supple, with very fine tannins, lovely freshness, and a spicy finish. A delicate Pommard, far removed from the appellation's rustic stereotypes.

Pommard 1er Cru Les Pézerolles: planted in 1963 halfway up the slope, in shallow soil combining Bathonian limestone and Argovian marl. Aromas of struck flint lead to a fruity, powerful palate of tart blue and red berries, culinary herbs, and fine, delicate tannins. It is often the most approachable of the estate's Pommards.

Pommard 1er Cru Les Epenots: from the Petits Epenots terroir at the foot of the slope, on Jurassic limestone and white marl, planted in 1961. The highly floral nose evokes faded rose; the palate is full-bodied, rounded, and powerful, almost massive in great vintages. The long, lively finish brings blood orange and a smoky undertone, with abundant but polished tannins.

Pommard 1er Cru Les Rugiens: the pinnacle of the range, from Rugiens Bas, planted in 1959 halfway up the slope on Bathonian limestone and Argovian marl. The nose is more restrained and robust, with a musky undertone and fresh black fruit. The palate combines depth, aromatic breadth, and a silkiness surprising for Pommard, all with great freshness. A magnificent premier cru built for very long aging.

Beaune 1er Cru Aux Coucherias: the estate's only venture into Beaune, this climat high on the slope near the Savigny boundary produces a structured, flavorful wine. Black cherry, licorice, and forest floor unfold across a generous palate with a saline finish. Excellent value within the range.

Meursault Les Chevalières: one of the estate's two white wines, from a limestone-rich parcel acquired by the grandfather. It combines tension, notes of citrus and white flowers, and a precise texture, in a style far more linear than the appellation's average. A beautiful expression of finely etched Meursault.

Meursault 1er Cru Les Cras: just twenty-three ares of Chardonnay, acquired by Marius Voillot in the early 1930s in one of the village's stoniest climats. The wine shows pronounced chalky minerality, aromas of fresh hazelnut, almond, and candied lemon, and a persistent saline finish. Produced in tiny quantities, it is the estate's rarest and most sought-after white cuvée, with excellent aging potential of eight to ten years.
