History of Domaine Parigot

The history of Domaine Parigot began in the 1950s in Meloisey, a small village in the Hautes-Côtes-de-Beaune. Georges Parigot, Alexandre's grandfather, farmed a small area of vines at the time. Well ahead of his time, he acquired a straddle tractor during a period when this tool was still rare in Burgundy. This early mechanisation, which paved the way for many growers in the region, allowed him to rapidly expand the estate's vineyard area and to begin the first bottle sales at the property — a bold move for the era.

In 1968, his son Régis Parigot joined him and together they acquired a plot in Pommard in the lieu-dit Les Vignots. Acquisitions followed one another: Pommard Les Charmots, Meursault Les Vireuils in 1979, Beaune 1er Cru Les Grèves in 1982. The cellar moved to the entrance of the village of Meloisey, accompanied by the installation of a modern vat room. The estate was officially refounded in 1983 by Régis Parigot. In 1990, several foreign exporters came knocking at the estate's door to sell its wines internationally. In 2008, Alexandre Parigot, son of Régis and Marie, took over and stamped his own signature, notably by purchasing two new plots in Meursault and Pommard in 2005. Today, the estate produces approximately 120,000 bottles per year, sold to wine merchants, restaurants and foreign importers around the world.

Terroirs and Vines of Domaine Parigot

The vineyard of Domaine Parigot extends over 18.5 hectares (sometimes 19 depending on the vintage) spread across seven prestigious communes of the Côte de Beaune: Meloisey (with the superb 3.5-hectare monopole Clos de la Perrière in the Hautes-Côtes-de-Beaune), Savigny-lès-Beaune (1er Cru Les Vergelesses), Beaune (1er Cru Les Grèves), Pommard (Les Vignots, Les Charmots, and the 1er Cru Les Épenots), Volnay, Meursault (Les Vireuils) and Chassagne-Montrachet. The planting reflects the diversity of the appellations, with 15 hectares of Pinot Noir and 3 hectares of Chardonnay.

The soils are essentially clay-limestone, typical of the Côte de Beaune, conducive to the noble expression of both Pinot Noir and Chardonnay. The Clos de la Perrière, the estate's monopole perched on the heights of Meloisey, offers an ideally exposed stony soil that brings freshness and minerality. The vines are managed using reasoned farming, without excessive use of phytosanitary products, with particular care given to biodiversity and the grassing of the soils. Alexandre Parigot, at the helm of the estate, "pampers" his plots with great care throughout the year. The harvests are carried out entirely by hand, a guarantee of optimal grape quality and rigorous sorting from the moment of harvest — an essential condition for producing pure wines that are true to their terroir.

Vinifications of Domaine Parigot

At the Meloisey cellar, Domaine Parigot has a modern vat room that allows for great precision in winemaking, while respecting the traditional Burgundian spirit. After sorting in the vat room, the Pinot Noir grapes are vinified in vats according to the classic methods of the region: cold pre-fermentation maceration, alcoholic fermentation with indigenous yeasts for the most refined cuvées, measured pigeage and pumping-over for an extraction of the utmost finesse. Temperatures are carefully controlled to preserve the primary aromas of the Pinot Noir.

For the whites, the Chardonnay grapes are gently pressed, then settled before an alcoholic fermentation carried out primarily in oak barrels, followed by ageing on fine lees with regular stirring, which brings volume, richness and aromatic complexity. The barrel ageing lasts from 12 to 18 months depending on the cuvée, with a measured proportion of new oak that supports the body without masking it. The reds are also aged in barrels, sometimes after an initial period in vat, to preserve the balance between fruit, structure and minerality. This approach produces balanced, generous wines, approachable in their youth and capable of evolving harmoniously in the cellar over several years.

The Cuvées of Domaine Parigot

The Bourgogne Chardonnay is the estate's entry-level white wine. A fresh and precise wine, marked by aromas of citrus, white flowers and white fruits, endowed with a taut, balanced palate and a saline finish, it represents an excellent quality-to-price ratio for discovering the Parigot style.

The Bourgogne Hautes-Côtes de Beaune Blanc is a high-altitude Chardonnay with a surprising nose and a silky robe, elevated by a very beautiful freshness. The palate remains present, balanced between acidity and unctuousness, with aromas of flowers and fruits, in a unique style sought after by enthusiasts.

The Bourgogne Hautes-Côtes de Beaune Vieilles Vignes Blanc is a prestigious single-plot cuvée. Pale gold robe with green and silver highlights, floral nose of hawthorn and acacia with notes of apple, quince, peach and almond, fresh and balanced palate with a perfect oscillation between fruitiness and minerality, saline and persistent finish.

The Meursault Les Vireuils is a thoroughbred Chardonnay from a plot acquired in 1979. An elegant wine with golden highlights, endowed with a gentle and pleasant minerality, aromas of flowers and fruits, elevated by a very well-crafted balance on the palate, characteristic of the queen appellation of great whites.

The Chassagne-Montrachet Blanc is a prestigious village cuvée, from plots situated in one of the greatest white wine appellations of the Côte de Beaune. A balanced Chardonnay, endowed with complex aromas of yellow fruits, almond and white flowers, with a carefully integrated barrel ageing.

The Bourgogne Hautes-Côtes de Beaune Rouge is the estate's entry-level red wine. A fresh and fruity Pinot Noir, endowed with aromas of small red fruits and a delicate mineral backbone, which makes for a magnificent introduction to the house style.

The Bourgogne Hautes-Côtes de Beaune Clos de la Perrière is the estate's superb monopole. From a 3.5-hectare enclosed plot established on the heights of Meloisey, this Pinot Noir offers a deep and brilliant robe, aromas of redcurrant and strawberry with a pronounced yet elegant oakiness, on an ample and fresh palate supported by delicate tannins. 26,000 bottles produced, awarded a star in the Guide Hachette.

The Savigny-lès-Beaune 1er Cru Les Vergelesses is an emblematic Premier Cru of the estate. Pinot Noir offering beautiful depth with a balanced structure, dressed in aromas of morello cherry, strawberry, violet and mocha, with a fine and refined finish.

The Beaune 1er Cru Les Grèves is one of the estate's prestigious cuvées, from the plot acquired in 1982. A Pinot Noir characterised by a beautiful minerality which, combined with small red fruits, gives a complex, subtle and elegant bouquet, with a great aptitude for ageing.

The Volnay is an airy and refined village Pinot Noir, true to the dancing elegance of the queen appellation of the feminine Pinots of the Côte de Beaune. Floral and fruity nose, silky palate, fine tannins and a perfumed finish.

The Pommard Village is a great classic of the estate, a legacy of the plot acquired as early as 1968. A full-bodied and deep Pinot Noir, marked by aromas of ripe black fruits, gentle spices and liquorice, supported by a solid tannic backbone.

The Pommard Les Vignots comes from this south-facing climat acquired in 1968 by Georges and Régis Parigot. A characterful, fairly robust and structured Pinot Noir, endowed with persistent tannins that superbly support the finish. A wine for ageing that should be left in the cellar for a few years to discover its full complexity.

The Pommard Les Charmots comes from the plot acquired in Pommard and declassified as a Premier Cru depending on the vintage. A thoroughbred Pinot Noir, marked by great aromatic complexity (black fruits, spices, undergrowth) and a powerful tannic structure, built for ageing.

The Pommard 1er Cru Les Épenots is undoubtedly one of the finest and most delicate Premiers Crus of Pommard in the estate. With its notes of faded roses, cherry and white pepper, this great Burgundy wine is very approachable despite its youth. It offers remarkable ageing potential with its perfectly measured and balanced tannins.

The Nuits-Saint-Georges is a cuvée from the Côte de Nuits, a geographical exception for an estate predominantly established on the Côte de Beaune. A Pinot Noir of a very beautiful colour and surprising brilliance, marked by aromas of cherry and blackcurrant, endowed with a very well-crafted balance on the palate, very supple tannins and a most appreciable finesse and freshness.
